3 tablespoons extra virgin olive oil
3 garlic cloves, minced
5 roma tomatoes, chopped
1/2 teaspoon crushed red pepper flakes
kosher salt & freshly ground black pepper
1 lb calamari, cleaned and sliced into 1/4 to 1/2-inch slices
2 tablespoons lemon juice
2 tablespoons extra virgin olive oil
2 tablespoons capers, rinsed and drained
1 lemon, zested
kosher salt & freshly ground black pepper
2 tablespoons fresh parsley, chopped

Steps:

  • In a large skillet, heat oil over medium high heat and cook the garlic until fragrant, about 30 seconds; add tomatoes and red pepper flakes and cook about 2 minutes.
  • Season calamari rings with salt and pepper, then add to the skillet; saute, stirring, until cooked through, about 2 or 3 minutes.
  • Transfer to a colander to drain a bit.
  • Place the lemon juice, olive oil, capers, and lemon zest into a clean glass jar with a lid; shake to combine, taste, and season with salt and pepper.
  • Transfer the salad to a serving bowl, pour dressing over top and gently toss to coat with dressing.
  • Garnish with fresh parsley.

Tips:

  • Choose fresh calamari: Look for calamari that is firm and has a slightly briny smell. Avoid calamari that is slimy or has a strong fishy odor.
  • Clean the calamari properly: Remove the head, tentacles, and ink sac from the calamari. Then, score the calamari body and remove the clear membrane. Cut the calamari into rings or strips.
  • Cook the calamari briefly: Calamari is a delicate seafood that can easily become tough if overcooked. Cook the calamari for no more than 2-3 minutes per side, or until it is just opaque.
  • Marinate the calamari: Marinating the calamari in a flavorful marinade before cooking will help to tenderize it and add flavor. Common ingredients used in calamari marinades include olive oil, lemon juice, garlic, herbs, and spices.
  • Serve the calamari immediately: Calamari is best served immediately after it is cooked. You can serve it as an appetizer, main course, or salad.

Conclusion:

Calamari is a versatile and delicious seafood that can be enjoyed in many different ways. Whether you are looking for a quick and easy appetizer or a more elaborate main course, there is sure to be a calamari recipe that you will enjoy. So next time you are looking for a new seafood dish to try, give calamari a try. You won't be disappointed!
