CALAMARI IN CREAMY WINE SAUCE

Calamari in Creamy Wine Sauce image

If you love calamari, you will LOVE this one! Light, flavorful and super delicious! I sub 1/2 and 1/2 for the cream and still love it as much! The original recipe was for 1/2 pound of pasta but I increase the pasta to 1 pound without increasing the other ingredients because my family doesn't like things as "saucy". If yours does, either 1/2 the pasta or double the sauce!

Number Of Ingredients 12

1 lb linguine
2 tablespoons olive oil
3 garlic cloves, crushed
8 ounces squid, cleaned and cut into rings and tentacles
3/4 cup white wine
3 cherry peppers, thinly sliced
2 tablespoons cornstarch
1 cup cream
1/2 teaspoon crushed red pepper flakes
salt and pepper
1/2 cup fresh basil, shredded
1/4 cup parmesan cheese, freshly grated

LINGUINI WITH CLAMS, MUSSELS, ROCK SHRIMP AND CALAMARI IN SPICY TOMATO SAUCE

Linguini with Clams, Mussels, Rock Shrimp and Calamari in Spicy Tomato Sauce image

Provided by Food Network

Categories     main-dish

Number Of Ingredients 12

1 1/2 ounces extra-virgin olive oil
1/2 ounce garlic, chopped
1/2 ounce shallots, chopped
4 Manila clams
5 black mussels
2 ounces rock shrimp
1/2 ounce white wine
3 ounces spicy marinara sauce
1 ounce calamari
6 ounces linguini, cooked
1 ounce fresh basil
1 tablespoon bread crumbs

Steps:

  • In a large saute pan, heat the olive oil. Add garlic and shallots, and saute until brown. Add the clams, mussels, and rock shrimp. When shells start to open, add the white wine. Reduce to half its volume, then add the marinara and calamari. Heat up the pasta (in salted boiling water) then add to the seafood. Allow pasta to cook in the sauce for a minute, then toss in the basil and bread crumbs. Serve in a deep pasta bowl immediately.

Tips:

  • Choose the freshest calamari you can find. Look for calamari that is firm and white, with no signs of yellowing or discoloration.
  • Clean the calamari thoroughly. Remove the head, tentacles, and fins, then score the body of the calamari in a criss-cross pattern. This will help the calamari to cook evenly and absorb the flavors of the sauce.
  • Cook the calamari quickly over high heat. This will help to prevent the calamari from becoming tough and chewy.
  • Use a good quality white wine. A dry white wine, such as a Sauvignon Blanc or Pinot Grigio, will work well in this dish.
  • Don't overcrowd the pan. If you are cooking a large batch of calamari, cook it in batches so that the calamari has plenty of room to cook evenly.
  • Serve the calamari immediately. Calamari is best served hot, so don't let it sit around for too long before serving.

Conclusion:

Calamari in a creamy white wine sauce is a delicious and elegant dish that is perfect for a special occasion. The calamari is cooked quickly over high heat, so it is tender and juicy, and the creamy white wine sauce is rich and flavorful. This dish is sure to impress your guests, and it is also relatively easy to make. So next time you are looking for a seafood dish to try, give calamari in a creamy white wine sauce a try. You won't be disappointed.
