CAKE MIX COOKIES FROM SCRATCH

Cake Mix Cookies from Scratch image

I have been intrigued by the cake mix cookie recipes published on Allrecipes and discussed in the Recipe Exchange. Between that, and the recurring requests in the Exchange for cookies that don't go flat, and people either unwilling or unable to use boxed cake mix, I was inspired to come up with this recipe. The basic recipe is for chocolate chip cookies. It is easily adaptable and can be customized to your liking.

HELOISE'S CAKE MIX COOKIES

Heloise's Cake Mix Cookies image

Fast and easy when you don't have enough time to prepare cookies from scratch. If you mix them by hand, they will be flatter and more like a cookie. If you use a mixer, they will be puffier and more like cake. The cake-like version is good with a simple confectioner sugar & milk (or juice if you used an orange or lemon cake mix) glaze.

Tips:

  • Use a good quality cake mix. Not all cake mixes are created equal. For the best results, use a mix that is fresh and has a good reputation.
  • Don't overmix the dough. Overmixing the dough will make the cookies tough. Mix the dough just until the ingredients are combined.
  • Chill the dough before baking. Chilling the dough will help the cookies hold their shape and prevent them from spreading too much in the oven.
  • Bake the cookies at the right temperature. The temperature of the oven will vary depending on the type of cake mix you are using. Be sure to follow the directions on the cake mix package.
  • Don't overbake the cookies. Overbaking the cookies will make them dry and crumbly. Bake the cookies just until they are set and the edges are just starting to brown.

Conclusion:

Cake mix cookies are a quick and easy way to satisfy your sweet tooth. With a few simple tips, you can make delicious cake mix cookies that are sure to be a hit with your family and friends.
