I used one of my favorite supermarket shortcuts to make these Cake Mix Carrot Cake Cookies - cake mix! That's right, you can use cake mix to make delicious, soft and yummy cookies. It is the easiest way to bake cookies.

1 box carrot cake mix (15.3 oz)
1/3 cup vegetable oil
2 eggs
1 tsp vanilla extract

Steps:

  • Line a baking sheet with parchment paper. Preheat the oven to 350 degrees. Pour the carrot cake mix into a large bowl.
  • Add in 1/3 cup of oil.
  • Add 2 eggs and 1 teaspoon of vanilla to the bowl.
  • Mix until all the ingredients have been thoroughly combined.
  • Use a tablespoon to scoop out the cookie dough and place the cookie dough on the cookie sheet a few inches apart.
  • Bake for 8-9 minutes. You'll want to remove these before they completely firm up.
  • After you remove the cookies from the oven, let them cool for a few minutes and then move them to a baking rack to cool.

Water, vegetable oil and eggs called for on cake mix box
1 cup canned pumpkin (not pumpkin pie mix)
1/2 teaspoon ground cinnamon
1/2 cup raisins
1/2 cup chopped pecans, toasted
1 cup butter, softened
2 packages (3 oz each) cream cheese, softened
2 cups powdered sugar
Additional toasted chopped pecans, if desired

Steps:

  • Heat oven to 350°F. Place paper baking cup in each of 24 regular-size muffin cups. Make cake mix as directed on box, using water, oil and eggs. Stir in pumpkin and cinnamon with whisk. Fold in raisins and pecans. Divide batter evenly among muffin cups.
  • Bake 22 to 24 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans to cooling racks. Cool completely, about 30 minutes.
  • In medium bowl, beat butter, cream cheese and powdered sugar with electric mixer on medium speed until light and fluffy. Frost cupcakes. Top with pecans. Store covered in refrigerator.

1 (15 ounce) can solid-pack pumpkin (the small can)
1 cup chopped pecans (optional) or 1/2 cup raisins (optional)
1 cup cream cheese frosting (optional)

Steps:

  • Preheat oven to 350°F.
  • Spray cookie sheets lightly with vegetable spray (Pam).
  • In a large bowl, mix together the cake mix and pumpkin with a fork or mixer until well blended; stir in nuts or raisins, if desired.

2 teaspoons pumpkin pie spice
¼ cup unsalted butter, melted
1 cup pumpkin puree
¼ cup all-purpose flour, or more as needed
1 cup raisins
1 (16 ounce) container cream cheese frosting

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line 2 baking sheets with parchment paper.
  • Combine cake mix, pumpkin puree, melted butter, and pumpkin pie spice in a large bowl; beat with an electric mixer until well blended. Add 1/4 cup flour; mix until incorporated. Add more flour as needed until dough is no longer sticky. Mix in raisins.
