Steps:
- 1. Combine flour, cake mix, baking powder, sugar and salt in a bowl and mix. Add 1 cup of milk, egg and vanilla extract and stir until smooth. You want the batter to look like regular pancake batter; not too thin, not too thick. This will vary greatly on the brand of cake mix you use. Start with 1 cup of milk and add more if needed. I suggest a small taste test as well to see if the pancakes are flavored enough.
- 2. Preheat a skillet on medium heat (I use an electric grilled and turn it to 250 degrees). Fold desired amount of sprinkles into batter. Pour batter in 1/4 cup measurements onto skillet and let cook until bubbles form on top, about 2-3 minutes. Flip and cook for 1 minute more. Serve with vanilla glaze.
- 3. FOR GLAZE: Mix milk, extract and powdered sugar until glaze forms. You may need to add a little more sugar or water/milk to reach desired consistency. Mix into glaze and drizzle on pancakes. Sprinkle some sprinkles ontop. Enjoy!

Tips:
- Use Fresh Ingredients: For the best-tasting pancakes, use fresh ingredients whenever possible. Fresh eggs, milk, and butter will make a big difference in the final product.
- Don't Overmix the Batter: Overmixing the batter will make the pancakes tough. Mix the ingredients just until they are combined.
- Let the Batter Rest: Letting the batter rest for a few minutes before cooking allows the ingredients to fully hydrate and results in a more tender pancake.
- Use a Non-Stick Griddle or Pan: A non-stick griddle or pan will prevent the pancakes from sticking and make them easier to flip.
- Cook the Pancakes Over Medium Heat: Cooking the pancakes over medium heat will help them cook evenly and prevent them from burning.
- Flip the Pancakes Only Once: Only flip the pancakes once, when bubbles form around the edges and the bottom is golden brown.
- Serve the Pancakes Immediately: Pancakes are best served immediately after they are cooked. Top them with your favorite toppings and enjoy!
Conclusion:
With these tips in mind, you can easily make delicious cake batter pancakes at home. Experiment with different flavors and toppings to create your own unique recipes. Enjoy your homemade treats and make memories with your loved ones!
