MAMA'S TOMATO GRAVY

Mama's Tomato Gravy image

This dish is truly a taste of Louisiana Cajun Country. I mean where folks are already sitting at the table drinking coffee and eating breakfast by the time the rooster crows. Mama made countless batches of biscuits and tomato gravy in her lifetime. I'm sure she learned to make this from her mother: Carmen Inez Shirley. This is the dish that puts my feet back under my mama's table. Serve with love over hot buttermilk biscuits along with bacon or sausage for breakfast, brunch, lunch or dinner.

Categories     Breakfast

Time 30m

Yield 6 serving(s)

Number Of Ingredients 9

1/2 lb sweet sausage, removed from casings
1/2 lb hot Italian sausage, removed from casings
3 tablespoons all-purpose flour
3/4 cup milk
3/4 cup chicken broth
1 1/2 teaspoons thyme, fresh chopped
salt
pepper
6 buttermilk biscuits

Steps:

  • Cook both of the sausage meats in large nonstick skillet over medium-high heat, breaking the meat up with the spoon, until browned and cooked through. Using a slotted spoon, transfer the meat to a bowl.
  • Remove all but 3 tablespoons of the fat from the skillet.
  • Sprinkle the flour into the skillet, stir well, and cook over medium-high heat for 1 minute, stirring constantly. Remove from the heat.
  • Slowly add the milk and the broth, whisking constantly until the mixture is smooth. Return the skillet to the heat and cook until the gravy is slightly thickened, 2 to 3 minutes.
  • Add the thyme, and season with salt and pepper.
  • Add the crumbled sausage meat and combine well.
  • Cook over medium heat until warmed through.
  • Serve immediately over split biscuits.

Tips:

  • Choose ripe tomatoes: Use fresh, ripe tomatoes for the best flavor. If you can't find ripe tomatoes, you can use canned tomatoes, but make sure to drain them well before using.
  • Sauté the vegetables: Sautéing the vegetables in a little bit of oil before adding the tomatoes will help to bring out their flavor and make the gravy more flavorful.
  • Use a good quality stock: The stock you use will make a big difference in the flavor of the gravy. Use a good quality chicken or vegetable stock, or make your own.
  • Season the gravy to taste: Be sure to season the gravy to taste with salt, pepper, and other spices. You can also add a bit of sugar to balance out the acidity of the tomatoes.
  • Let the gravy simmer: Let the gravy simmer for at least 30 minutes, or longer if you have time. This will help to develop the flavor and thicken the gravy.
  • Serve the gravy with your favorite dishes: Cajun tomato gravy can be served with a variety of dishes, such as chicken, fish, shrimp, or pasta. It can also be used as a dipping sauce for bread or vegetables.

Conclusion:

Cajun tomato gravy is a delicious and versatile sauce that can be used in a variety of dishes. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a flavorful sauce to add to your meal, give Cajun tomato gravy a try.
