2 tablespoons ground black pepper
2 tablespoons white pepper
2 tablespoons brown sugar
1 tablespoon garlic powder
1 1/2 teaspoons cayenne pepper
1 1/2 teaspoons dried thyme
1 teaspoon dried sage
4 -6 country-style pork ribs (about 4 to 6 10-14 ounce size each)

Steps:

  • Combine seasonings. Rub half of this on ribs the night before you plan to cook them. Refrigerate.
  • Prepare the smoker.
  • Remove ribs from refrigerator 25-30 minutes prior to when you plan on placing them on smoker. Rub in remaining seasoning mixture.
  • Cook on smoker for 2.5 to 3 hours.** They should be done and quite tender with a coating of crispy spices on the suface.

2 cups baby carrots
1 large onion, coarsely chopped
1 large green bell pepper, cut into 1 inch pieces
1 large red bell pepper, cut into 1 inch pieces
2 teaspoons garlic, minced
2 tablespoons cajun seasoning, divided (or Creole Seasoning)
3 1/2-4 lbs pork ribs (country-style)
1 (14 1/2 ounce) can stewed tomatoes, undrained
2 tablespoons water
1 tablespoon water
1 tablespoon cornstarch
hot cooked rice

Steps:

  • Combine carrots, onion, bell peppers, garlic, and 2 tsp Cajun or Creole seasoning in slow cooker; mix well.
