2 8-inch spinach wraps
4 leaves Romaine lettuce
5 oz. chicken breast, cooked and warmed
6 slices of bacon, cooked but not crispy
1 ripe tomato
1 ½ oz. mozzarella cheese, pre-shredded
1 ½ oz. provolone cheese, pre-shredded
2 T. ranch dressing

Steps:

  • Wash and dry Romaine lettuce. Remove tough ribs at the bottom with a sharp knife.
  • Remove tomato seeds and dice finely.
  • Place wrap on smooth surface and place 2 piece of Romaine lettuce on top.
  • Add half the chicken, bacon, tomato, and cheeses on top of the lettuce. Make sure to distribute evenly.
  • Add a thin layer of ranch dressing on top.
  • Fold the wrap using the standard wrapping method, making sure that the ingredients do not fall out.
  • Cut rolled wraps in half and secure each half with a toothpick.
  • Repeat process with the second wrap.
  • Serve with your favorite potato chips or preferred sides.

2 boneless, skinless chicken breasts (partically thawed and sliced in strips)
2 flour tortillas
lots of fresh leaves of spinach
honey mustard
2 Tbsp cajun seasoning
1 tsp garlic powder with parsley
1/4 large sweet onion
1 clove garlic crushed and minced (mine was from a jar)

Steps:

  • 1. As it says above slice the chicken while partly frozen. It is easier. Then add the spices and toss well. put in fridge for 1-4 hours before starting this dish.
  • 2. 20 minutes before dinner Put together the wraps by putting on a plate and smearing lightly with honey mustard. We like the marzetti's from the produce isle. Then add a couple of layers of spinach over the honey mustard. set a side.
  • 3. In a wok or fry pan add a spray of oil. over Med high heat toss the chicken to fry until done. adding the onion strips the last 3 or so minutes just to lightly cook.
  • 4. divid chicken and onion mix between three wraps and play down the center of each. Now just roll and serve. Eric had two I ate one. was a wonderful and light dinner. You could add a cream of potatoe soup or potato chips of you wish

3/4 pound chicken breasts, uncooked boneless, skinless, cut into strips
4 medium tortillas, flour, fat-free
1 tablespoon all-purpose flour
1/2 small onion, red, thinly sliced
1 teaspoon paprika
2 cup mixed baby greens
3 1/2 tablespoons Cajun seasoning, divided
8 medium basil, leaves
1 1/2 teaspoons fresh lemon juice
4 teaspoons fat-free mayonnaise
1 small tomato, cut into strips
Salt and pepper to taste

Steps:

  • Mix the 3 tablespoons of Cajun seasoning, paprika and flour. Season chicken with salt and pepper and coat with seasoning mixture. Spray a large, nonstick skillet with cooking spray. Over medium-high heat, add chicken to pan and sauté until cooked through (approximately about 1 to 2 minutes per side). Remove chicken from heat and set aside. In a separate bowl, mix mayonnaise, lemon juice and 1/2 teaspoon Cajun seasoning for the dressing. On each tortilla, spread 1 teaspoon dressing, add greens, onion slices, two basil leaves and some slices of tomatoes. Top with chicken pieces and wrap. Enjoy!

2 tablespoons olive oil
1 lb boneless skinless chicken breasts (roughly 2 large; sliced into 1/2 inch pieces; see note 1)
3 tablespoons cajun seasoning ( note 2)
2 bell peppers (sliced into strips)
1 red onion (sliced into strips)
2 cups cherry tomatoes (quartered)
4 large tortillas (to serve)

Steps:

  • Cook Chicken - Heat olive oil in a medium non-stick pan over medium heat. Add the chicken, and sprinkle with 1 ½ tablespoons of cajun seasoning. Cook, stirring frequently, for 5-7 minutes, until cooked through.
  • Sautée Veggies - Remove the chicken from the pan and place in a clean bowl. Add the bell pepper and onion to the pan, sprinkling with another 1 ½ tablespoons of cajun seasoning. 4 ounces monterey jack pepper cheese, shredded (you can use up to 6 oz)
1 cup frozen spinach, thawed and drained (you can also use fresh cooked spinach)
2 tablespoons vegetable oil
2 tablespoons cajun seasoning
1 tablespoon breadcrumbs
sea salt, to taste
fresh ground black pepper, to taste

Steps:

  • Preheat oven to 350 degrees.
  • Flatten the chicken to 1/4-inch thickness.
  • In a medium bowl, combine the pepper jack cheese, spinach, salt and pepper.
