Steps:

  • Heat 1 tablespoon oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then add half of squash and sauté, stirring occasionally, until browned, about 5 minutes. Transfer browned squash to a bowl, then heat remaining tablespoon oil and sauté remaining squash in same manner. Return squash in bowl to skillet. Add garlic and sauté, stirring occasionally, 1 minute. Add water, salt, and pepper and simmer briskly, covered, until squash is tender and most of liquid is evaporated, 6 to 7 minutes. 1/4 cup olive oil, divided
1 tablespoon olive oil, divided
2 butternut squash, quartered and seeded, each quarter halved
2 tablespoons cajun seasoning, divided
8 teaspoons cajun seasoning, divided
4 large onions, halved and sliced
4 medium bell peppers, quartered and sliced (red or green)
8 large celery ribs, sliced on the bias
5 tablespoons flour
1 1/2 tablespoons cider vinegar

Steps:

  • Preheat oven to 350 degrees F.
  • Combine 1 Tbsp oil and garlic in small bowl. Brush garlic-oil mixture over butternut squash pieces, and place on baking sheet.
  • Sprinkle each squash piece with 1/2 tsp Cajun seasoning, and season with salt and pepper, if desired.
  • Bake 45 minutes to 1 hour, or until squash pieces are tender enough to easily pierce with fork.
  • Meanwhile, heat remaining 1/4 cup oil in large skillet over medium heat. Add onions, bell peppers, and celery, and cook 20 to 25 minutes, or until vegetables are soft and beginning to brown, stirring occasionally.
