TOMATILLO SALSA

This recipe was created to accompany [Cajun Shrimp Tacos with Tomatillo Salsa](/recipes/recipe_views/views/2228). Can be prepared in 45 minutes or less.

Yield Makes about 3 3/4 cups

Number Of Ingredients 4

3/4 pound tomatillos,* husks removed, rinsed, quartered (about 3 cups)
1/2 cup coarsely chopped unpeeled green apple (such as Granny Smith)
2 tablespoons coarsely chopped fresh basil
2 tablespoons coarsely chopped fresh mint

Steps:

  • Finely chop tomatillos, apple, basil and mint in food processor. Transfer to small bowl. Season to taste with salt. (Can be prepared 6 hours ahead. Let stand at room temperature.)

Tips:

  • Use fresh, succulent shrimp. Look for shrimp that is bright pink or orange in color, with a firm texture. Avoid shrimp that is gray or slimy.
  • Don't overcook the shrimp. Shrimp cooks very quickly, so it's important to cook it for just a few minutes per side, or until it is opaque and pink.
  • Make sure your tortillas are warm and pliable. This will help them to fold easily without breaking.
  • Pile on the toppings. In addition to the shrimp, you can add your favorite taco toppings, such as shredded cabbage, diced tomatoes, avocado, and salsa.
  • Serve the tacos with a wedge of lime. This will add a bright, citrusy flavor to the tacos.

Conclusion:

These Cajun shrimp tacos with tomatillo salsa are a delicious and easy-to-make meal that is perfect for any occasion. The shrimp is succulent and flavorful, the salsa is tangy and refreshing, and the tacos are sure to be a hit with everyone at the table. So next time you're looking for a quick and easy weeknight meal, give these tacos a try. You won't be disappointed!
