This is a spin on the popular dish seafood salad. you can still call it that but there are only two meats so I kept it simple. This is for the seafood lovers who like it spicy.

1 (16 ounce) box cooked macaroni noodles
3 lbs medium unshelled shrimp
1 lb of real crabmeat (claw or lump)
1/4 cup finely chopped red onion
1 cup mayonnaise
1 cup sour cream
1 tablespoon spicy mustard
1/2 cup butter or 1/2 cup margarine
1 tablespoon cajun seasoning
1 tablespoon Accent seasoning
1 tablespoon Mrs. Dash seasoning mix
1 teaspoon onion powder
1/2 cup sweet relish
1/4 teaspoon cayenne pepper (optional)
1 teaspoon garlic powder

Steps:

  • 1. Melt stick of butter in a saute pan and add garlic to taste.
  • 2. Saute the shrimp over medium heat until no longer pink and add the cajun seasoning to taste. Remove from heat. Then add the crab meat, Mix well and set aside.
  • 3. Add cooked pasta to a large mixing bowl along with chopped onion and mayo and sour cream.
  • Now add, Onion powder, Garlic powder, Accent, Mrs. Dash and Sweet Relish and mix well. ALL SPICES ARE TO TASTE. DO NOT ADD ANY SALT TO PASTA MIX AS THE MEAT WILL ADD SALT.
  • Add the meat mixture to the pasta mixture and mix well. If you. Eed to add more MAYO do no now.
  • Transfer to a serving bowl and top with Cayenne pepper. Chill 2-3 hours and serve cold.

300 g new potatoes (small baby or chats 10 oz halved)
1 tablespoon olive oil
250 g king prawns (8 oz, cooked and peeled)
1 garlic clove (minced)
2 spring onions (finely sliced)
2 teaspoons cajun seasoning
1 avocado (peeled, stoned and diced)
1 cup alfalfa sprout
salt (to boil potatoes)

Steps:

  • Cook the potatoes in a large saucepan of lightly salted boiling water for 10 to 15 minutes or until tender, drain well.
  • Heat the oil in a wok or large nonstick frying pan/skillet.
  • Add the prawns, garlic, spring onions and Cajun seasoning and stir fry for 2 to 3 minutes or until the prawns are hot.
  • Stir in the potatoes and cook for a further minute.

5 medium red potatoes
6 cups water
3 tablespoons seafood seasoning
1 tablespoon salt
1 pound medium uncooked shrimp
1/4 cup chopped green onions
1 jar (2 ounces) diced pimientos, drained
1/2 cup mayonnaise
1 teaspoon cider vinegar
1/2 teaspoon sugar
Additional salt to taste

Steps:

  • Place the potatoes in a large saucepan; add the water, seafood seasoning and salt. Bring to a boil. Reduce heat; cover and simmer for 25 minutes., Add the shrimp; cover and cook for 5 minutes or until shrimp turn pink and potatoes are tender. Drain. Peel and dice potatoes. Peel and devein shrimp; cut into pieces., In a large bowl, combine the potatoes, shrimp, onions and pimientos. In a small bowl, combine the mayonnaise, vinegar and sugar. Brining Solution:
1/4 cup kosher or coarse salt (not iodized)
1/4 cup sugar
1 cup boiling water
2 cups ice
Cajun Caesar Dressing:
3 large egg yolks
1 garlic clove, finely minced
2 flat anchovy fillets in oil, chopped fine
2 teaspoons Creole mustard
2 teaspoons ketchup
1 teaspoon fresh parsley, finely chopped
1/2 teaspoon cayenne pepper
2 tablespoons fresh squeezed lemon juice
1/2 teaspoon prepared horseradish
1/2 teaspoon Worcestershire sauce
1/2 teaspoon seasoned salt
1/2 teaspoon fresh ground pepper
3/4 cup extra virgin olive oil
Fresh Garlic Croutons:
2 cups 1/2-inch cubes day-old sourdough bread
2 tablespoons melted butter
3 cloves garlic

  • Brine Shrimp: Stir salt and sugar into boiling water until dissolved; pour into large bowl filled with ice; add up to 2 pounds raw, peeled and de-veined shrimp. Let shrimp sit in the brine, refrigerated for 20 to 30 minutes. Remove shrimp from brine and drain thoroughly. Rinse the shrimp thoroughly under cold water and dry on paper towels. Refrigerate the raw brined shrimp until ready to use. Prepare Cajun Caesar Dressing: Purée all ingredients except olive oil in a blender. With motor running, add oil in a slow stream, blending until dressing is thick and emulsified. Taste and adjust seasonings as needed. Refrigerate if not using immediately. 1 large orange or yellow bell pepper, chopped
1/4 cup chopped fresh parsley
