Creamy Cajun Shrimp and Sausage Pasta, is a celebration of flavors in one outstanding dish. I totally thought it tasted like I had ordered from a restaurant. This sauce is absolute Cajun heaven!

12 ounces uncooked pasta (I used fettuccine)
2 tablespoons olive oil
1 lb Andouille Sausage
1 pound large shrimp (For this I used frozen deveined. If using fresh clean and devein)
1 bell peppers, thinly sliced (I used a red bell pepper)
1 small onion, peeled and diced
2 tablespoons olive oil or butter
4 large cloves garlic, minced or pressed
1 tablespoon sugar
1 cup chicken broth
1 15 oz can crushed tomatoes
1 1 1/2 cup heavy cream
1/4 cup Parmesan cheese
2 tablespoons Cajun seasoning, homemade or store-bought (divided using a pinch to season the shrimp)
1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
salt and fresh cracked black pepper, to taste
1 tablespoon chopped fresh parsley for garnish (optional)

Steps:

  • Cook the fettuccine according to the package instructions, and keep warm.
  • Cut the sausage into 1/4" -1/2" chunk size slightly diagonal. Season shrimp with salt and pepper and a pinch of Cajun seasoning.
  • In a large skillet over medium heat, heat olive oil, add onion and bell pepper. When the onion is almost translucent, about 3 minutes then add garlic. Remove and set aside.
  • Add sausage to brown and set aside. Pour out any excess grease leaving about 1 tablespoon, add the shrimp and cook until pink, curled and cooked through, about 2 minutes per side, then transfer to a plate.
  • Add chicken broth, stirring and scraping up any brown bits from bottom of pan. Add crushed tomatoes, sugar, remaining Cajun seasoning, thyme and heavy cream then turn down to a simmer.
  • Once simmering, add Parmesan and stir into sauce, simmer a few more minutes and taste if sauce needs any extra salt or pepper.
  • If serving directly from the skillet, mix in pasta and top with shrimp, sausage and the parsley. Depending on the size of your skillet I poured the pasta into a serving dish, and topped with the sauce, shrimp, sausage and sprinkled the chopped parsley.

3 tablespoons unsalted butter (divided)
1 lb (450g) shrimp (, peeled and deveined)
12 oz. (340g) linguine (, fettuccine, or other long pasta)
1 onion (, minced)
1 red bell pepper (, diced)
1 green bell pepper (, diced)
3 cloves garlic (, chopped)
1 cup diced seeded tomatoes
1/2 lb (225g) andouille sausage or kielbasa (, sliced)
1 tablespoon cajun seasoning
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
2/3 cup chicken stock
1/2 cup heavy cream
1 tablespoon Worcestershire sauce
1/2 cup grated Parmesan cheese
parsley (, for garnish)

Steps:

  • Cook the pasta according to package directions.
  • Season the shrimp with salt and pepper. In a skillet, heat 1 tablespoon butter and cook for 1-2 minutes per side, until no longer translucent. Remove from the pan and cover with foil.
  • In the same skillet, heat 2 remaining tablespoons butter and add the onion and bell peppers. Cook for 3-5 minutes. Now add the garlic and cook for 30 seconds more. Then, add the tomatoes.
  • Add the sausage and cook for another 1-2 minutes, stirring. Now add the cajun seasoning, thyme, oregano, and mix well. Pour in chicken stock, heavy cream, and Worcestershire sauce. Mix once again.
  • Add the cooked shrimp and pasta and toss to coat. Sprinkle with the Parmesan cheese.
  • Add more salt and pepper, if needed. Sprinkle with the chopped parsley and serve. Enjoy!

1 lb uncooked medium shrimp, peeled and deveined
1 (12 ounce) package fettuccine pasta, cooked
1/2 lb dried smoked sausage, chopped (I use Andouille sausage for this)
1/2 cup butter
1 onion, chopped
2 tablespoons minced fresh garlic (or to taste)
1 red bell pepper, chopped
3/4 cup diced celery
1 -2 tablespoon cajun seasoning (use homemade or purchased, I use Emeril's mix)
3 tablespoons flour
2 cups chicken broth
1 1/2 cups whipping cream (unwhipped)
6 ounces Velveeta Mexican cheese, cubed
3 green onions, chopped
1/2 cup grated parmesan cheese
salt and black pepper

Steps:

  • In a Dutch oven cook the dry sausage over medium heat for about 8-10 minutes or until browned; remove the sausage, drain fat leaving about 1 tablespoon in the Dutch oven.
  • Melt the butter in the drippings over medium heat; add in shrimp; cook for about 4-5 minutes or until the shrimp turns pink; set the shrimp aside.
  • Add in onion, red bell pepper, and celery cook for 5 minutes adding in the garlic the last 2 minutes of cooking.
  • Stir in the Cajun seasoning and flour to the veggies; cook over medium heat 1 minute, stirring constantly.
  • Gradually stir in chicken broth; bring to a boil over medium-high heat, stirring constantly; boil for 1 minute, then reduce heat to low and stir in the whipping cream,.
  • Cook simmering for about 7-8 minutes.
  • Add in the Velveeta cubes, sausage and shrimp, stirring until the cheese melts.
  • Stir in the chopped green onions and Parmesan cheese; mix to combine, season with salt and pepper.
  • Serve over the cooked pasta.
