Tips for Making Cajun Shrimp and Greens Soup

* Use fresh shrimp for the best flavor. If using frozen shrimp, thaw them completely before cooking. * To devein the shrimp, make a shallow cut down the back of the shrimp and remove the dark vein. * Use a variety of greens in your soup, such as kale, collard greens, or spinach. * If you don't have any Creole seasoning, you can make your own by combining paprika, garlic powder, onion powder, cayenne pepper, and black pepper. * Be careful not to overcook the shrimp, as they will become tough. * Serve the soup with crusty bread or rice.
