- Heat a grill or grill pan to medium-high heat. Remove the chicken from the marinade and sprinkle with salt and pepper. Grill the chicken until cooked through and 165 degrees F, about 5 minutes. Remove from the heat.
- Place the cheese on the bottom of each roll, then top with 2 chicken thighs, lettuce and a dollop of Cajun Ranch Dressing.
- In a medium bowl, combine the mayonnaise, buttermilk, hot sauce, lemon juice, blackening seasoning, mustard, salt and cayenne. Fold in the scallions, celery, red peppers and garlic with the mayonnaise mixture.

Steps:
- 1. Add Cajun Seasoning (I use Weber N' Orleans Cajun) to the Ranch Dressing and mix well. Store leftovers in refrigerator in a covered container.
Tips:
- When selecting mayonnaise, opt for a full-fat variety for a richer, creamier sauce. For a tangier sauce, use a mayonnaise with lemon or lime juice.
- Use freshly squeezed lemon juice for the best flavor. If you don't have fresh lemons on hand, you can use bottled lemon juice, but the flavor will be less bright.
- Adjust the amount of cayenne pepper to your desired level of spiciness. If you like things extra spicy, you can add up to 1 teaspoon of cayenne pepper. For a milder sauce, start with 1/4 teaspoon and add more to taste.
- For a smoky flavor, use smoked paprika instead of regular paprika.
- If you don't have buttermilk on hand, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk and letting it sit for 5 minutes.
- To make the sauce ahead of time, simply whisk all of the ingredients together and store the sauce in an airtight container in the refrigerator for up to 3 days.
Conclusion:
Cajun ranch sauce is a versatile sauce that can be used on a variety of dishes, from chicken and fish to vegetables and salads. It's also a great dipping sauce for appetizers and snacks. With its creamy, tangy, and slightly spicy flavor, Cajun ranch sauce is sure to be a hit with everyone who tries it. So next time you're looking for a delicious and easy-to-make sauce, give Cajun ranch sauce a try!
