2 tablespoons olive oil
1 pound boneless, skinless chicken thighs (about 4), cut into 1-inch pieces
2 1/2 teaspoons Cajun seasoning
2 medium green bell peppers, stemmed, seeded and cut into 1/4-inch strips
1 small yellow onion, thinly sliced
2 cloves garlic, chopped
12 ounces smooth penne (see Cook's Note)
4 cups low-sodium chicken broth
One 14.5-ounce can diced tomatoes
6 ounces cream cheese, cubed, at room temperature
Kosher salt
4 scallions, sliced, for serving

Steps:

  • Heat the oil in large wide pot over medium-high heat. Add the chicken and Cajun seasoning and cook, stirring occasionally, until the chicken just starts to change color and the spices are toasted, about 2 minutes.
  • Add the peppers and onions and cook until they just begin to release some of their juices, 3 to 4 minutes. Stir in the garlic and cook until softened, 1 minute.
  • Add the pasta, chicken broth and tomatoes and bring to a boil over medium-high heat. When it boils, continue to cook, stirring occasionally, until the pasta is al dente and the sauce is thickened and reduced by about half, about 15 minutes.
  • Remove from the heat and add the cream cheese and 1 1/2 teaspoons kosher salt. Stir until the cream cheese is combined and melted. Don't worry if the sauce looks runny, it will thicken as it sits. Top with sliced scallions.

1 pinch coarse sea salt to taste
1 large ice cube
ice
2 fluid ounces white tequila
1 ½ fluid ounces triple sec
1 fluid ounce freshly squeezed lime juice
1 slice lime

Steps:

  • Moisten the rim of a glass with a lime wedge. Sprinkle salt onto a plate. Lightly dip the moistened rim into the salt. Place a large ice cube in the glass and freeze the prepared glass until ready to serve.
  • Fill a cocktail shaker with fresh ice. Add tequila, triple sec, and lime juice. Cover and shake vigorously until outside of the shaker has frosted. Strain into the prepared glass and garnish with a slice of lime.

From tideandthyme.com, supposedly from the HBO series True Blood set in Louisiana. If using the chile-infused tequila, note the time requirements for steeping and plan ahead. The sweet & sour of the margarita temper the spiciness.

4 ounces chile-infused tequila (optional)
3 ounces orange liqueur
3 ounces margarita mix
1 teaspoon Crystal hot sauce or 1 teaspoon any other louisiana hot sauce
2 cups ice
chili pepper (to garnish)
lime slice, for garnish
salt
5 jalapeno peppers, halved
5 serrano peppers, halved
1 cup tequila

Steps:

  • FOR THE CHILE-INFUSED TEQUILA: combine all ingredients in a jar or bowl. Cover, and let sit at room temperature overnight or at least 2 hours. Strain into bottle or jar and keep in a cool, dark place.
  • MARGARITA:.
  • Rim margarita glasses with salt by running a slice of lime around rim and then dipping in margarita salt. Set aside.
  • To make the margaritas, combine the chile-infused tequila, orange liqueur, margarita mix, hot sauce, and ice in a blender. Cover, and puree for 1 minute, until no chunks of ice remain.
  • Fill the prepared glasses with blended margaritas. Garnish with lime slices and a whole chile pepper.
