Jen's Deep Fried Cajun Okra image

My family loves okra! Whether it boiled, fried or mixed in a dish, we love it! This dish has a Southern flavor with a mix with a hint of Cajun. They are great dipped in ranch.

1-2 lb okra, fresh or frozen (whole or cut)
5 c canola oil, for frying
1 c yellow cornmeal
1/2 c all-purpose flour
2 Tbsp Cajun seasoning
1/2 tsp black pepper
1/2 tsp kosher salt
1 tsp garlic powder
1/2 c buttermilk
4-6 dash(es) hot pepper sauce

Steps:

  • 1. If using whole fresh okra, wash thoroughly, drain, and cut stems off. You can slice them in half length-wise or slice them into 1/2 inch rounds. Frozen cut okra saves time. Place in a bowl and set aside.
  • 2. Heat oil in a large, heavy-bottomed skillet or Dutch oven to 350 degrees F. (You may not need to use this much oil; do not fill the pan more than halfway up the sides with oil.) Get a cookie sheet and line with paper towels. Set aside.
  • 3. In a medium bowl, combine cornmeal, flour, garlic powder, Cajun seasoning, black pepper, and salt. Mix well.
  • 4. In a separate bowl add buttermilk and hot pepper sauce. Whisk together.
  • 5. Dip okra in buttermilk and then dredge in cornmeal-flour mixture to coat well.
  • 6. Carefully add okra to the HOT oil and cook until golden brown. (It may be necessary to fry the okra in batches.)
  • 7. Remove from oil, drain on paper towels, and then serve immediately with favorite dipping sauce.

6 cups oil, for frying
1/2 cup cornmeal
1 cup all-purpose flour
1/4 teaspoon cajun spices
2 lbs fresh okra, sliced 1/2-inch thick
1/2 cup buttermilk
1 cup mayonnaise
3 tablespoons Thai sweet chili sauce
1 tablespoon chili-garlic sauce
1/8 teaspoon ground red pepper
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Steps:

1 tablespoon cumin seeds, ground in a mortar and pestie
1 tablespoon garlic powder
2 teaspoons ground paprika
1 teaspoon chile flakes
1 teaspoon coriander seeds, geound in a mortar and pestie
2 tablespoons vegetable oil, divided
2 1/2 pounds ground beef
1 (12-ounce) bottle dark beer, divided
1 sweet onion, diced
2 cloves garlic, chopped
1 red bell pepper, seeded and diced
1 1/2 cups fresh okra, cut into 1/2-inch thick slices
1 to 2 canned chipotle peppers in adobo sauce
1 (14.5-ounce) can diced tomatoes
2 cups low-sodium beef stock
1 (14-ounce) can red kidney beans, drained and rinsed
1/4 bunch fresh cilantro, stems chopped and leaves picked
Kosher salt and freshly ground black pepper

Steps:

  • For the spice mix: In a small bowl, mix to combine the ground cumin seeds, garlic powder, paprika, chile flakes, and ground coriander seeds.
  • For the chili: Heat 1 tablespoon of the vegetable oil in a cast-iron pan over medium-high heat. Add the ground beef to the pan and cook, stirring frequently, until the moisture has evaporated, and the beef is browned. Drain the beef of any fat that has rendered, and deglaze the pan with half of the beer.
  • In a separate pot, add the remaining tablespoon vegetable oil, and add the onion, garlic, peppers, and okra, and saute over medium-high heat. Sprinkle over the chili spice mix, and the chipotle pepper, stirring to combine. Deglaze the pot with the remaining beer, and add the browned beef.
  • Add the diced tomatoes, and stock, and then bring everything to a boil. Place the lid over the pot, and reduce the heat to a simmer. After 1 hour, add in the kidney beans, and cilantro stems. Keep cooking for another 30 minutes over low heat.
  • Adjust the chili's seasonings with salt, and black pepper, to taste. Switch off the heat and garnish with the cilantro leaves.
