DELICIOUS CAJUN STYLE CORN SOUP

Delicious Cajun Style Corn Soup image

This is a pretty spicy soup that I have tallied up the points for, for those Weight Watcher Members. I love spicy foods that are full of flavor as well. If the thought of "corn" soup seems odd, don't let that deter you. I have tried other versions of corn soup, but the way I make this soup removes some of the calories, by...

Time 50m

Number Of Ingredients 7

1 lb johnsonville hot italian turkey sausage
2 can(s) original rotel
2 can(s) whole kernel sweet corn, undrained
1 can(s) swansons chicken broth
2 red potatoes, cut up in to small bite size portions (may substitute one medium- large white potatoe)
1 medium onion, chopped (large size will work as well)
1 -2 Tbsp minced garlic

Steps:

  • 1. Remove casings (skin covering) from sausage. In a large cast iron, or non-stick cooking pot, add chopped onion, minced garlic and sausage. Cook until sausage is done. Add all other ingredients. Cook for about 30 minutes, or until potatoes are done. Enjoy!
  • 2. Note: I like mine pretty spicy, but it is the kind of spicy that also comes with a lot of flavor as well. If you can't take the heat, than I strongly suggest substituting one of the cans of Original Rotel with the Mild version. If you find it still too spicy, than use plain turkey sausage (lean if possible) rather than Hot turkey sausage.
  • 3. For those who want to reduce the caloric value. Hot Italian turkey sausage and low sodium chicken broth can be used as a substitute. Tastes just as good.

CAJUN POTATO & CORN SOUP

I made this in culinary school during "refrigerator madness day," in which we had to come up with a soup & garnishes using only the ingredients that still remained in our class fridge at the end of the week. We then dished it up buffet-style & invited other classes & chefs in for lunch. *This version has andouille, ham, shrimp...

CAJUN CORN SOUP

Cajun Corn Soup image

I found this recipe a few years back in an Southern Living magazine. But since I like my a little spicier I added the Cajun style tomatoes. Now when my extended family comes from up north to what they call "Cajun" country I fix this for them.

Provided by Tammy Raynes

Categories     Vegetable Soup

Time 1h45m

Number Of Ingredients 15

1 c chopped onion
1 c chopped green pepper
6 green onions, sliced
1/2 c canola oil
1/2 c all-purpose flour
3 c water
2 pkg (16-oz each) frozen corn
1 1/2 lb smoked sausage, cut into 1/4" pieces
3 c cubed fully cooked ham
1 can(s) (14.5-oz) cajun stewed tomatoes
2 c chopped peeled tomatoes
1 can(s) (16-oz) tomato paste
1/8 tsp cayenne pepper or to taste
salt to taste
hot pepper sauce to taste (start with a little)

Steps:

  • 1. In a large boiler, saute the onion, green pepper and green onions in oil for 5 minutes or until tender.
  • 2. Stir in flour and cook until bubbly. Gradually add the water and bring to a boil.
  • 3. Add the corn, sausage, ham, tomatoes, tomato paste, cayenne pepper, salt and pepper sauce; return to a boil. Reduce heat; simmer, uncovered, for 1 hour, stirring occasionally.

Tips:

  • Use fresh corn. Fresh corn has a sweeter, more flavorful taste than frozen or canned corn. If you can't find fresh corn, frozen corn is a good alternative.
  • Don't overcook the corn. Overcooked corn will lose its flavor and become mushy. Cook the corn just until it is tender, about 5-7 minutes.
  • Use a variety of spices. Cajun seasoning is a blend of spices that typically includes paprika, garlic powder, onion powder, cayenne pepper, and black pepper. You can also add other spices to your taste, such as cumin, oregano, or thyme.
  • Don't be afraid to experiment. There are many different ways to make corn soup. Feel free to experiment with different ingredients and flavors until you find a recipe that you love.

Conclusion:

Corn soup is a delicious and versatile dish that can be enjoyed for lunch, dinner, or even breakfast. It is a great way to use up leftover corn, and it can also be made with frozen or canned corn. With its creamy texture and flavorful broth, corn soup is a comfort food that will warm you up on a cold day. So next time you are looking for a quick and easy meal, give corn soup a try.
