I make this recipe for my husband for lunch. He loves the Cajun Style Sausage and Rice, however it plays havoc on his stomach at times but I found this recipe doesn't do that and he enjoys it almost as much. If you like cheese it also tastes very good with some sprinkled on the top after you remove it from the oven.

1 cup uncooked white rice
2 cups water
1 pound ground beef
1 onion, chopped
1 (15 ounce) can red beans, drained and rinsed
1 (14.5 ounce) can diced tomatoes
2 tablespoons Cajun seasoning

Steps:

  • Bring the rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes.

1/2 cup chopped white onion
2 cups beef broth
1 1/2-2 teaspoons cajun seasoning (I used Low-Sodium Cajun Seasoning)
1 (15 ounce) can pinto beans, drained
1 cup white rice (NOT instant)
