CAJUN BAKED CATFISH

I've been making this recipe for years, and it's very good. I believe I clipped this recipe from the Tulsa World Newspaper in the 80's, but don't remember the origin. This is a nice change from fried catfish. You can use any fish, toss in some shrimp, green pepper, celery and fresh tomatoes are also good. Serve with rice. Posted for ZWT5.

Tips:

  • Use fresh catfish fillets. Fresh catfish fillets will have a mild, slightly sweet flavor. Avoid fillets that are frozen or have a strong fishy smell.
  • Season the catfish fillets well. Cajun seasoning is a good choice for catfish, as it adds a spicy, flavorful crust. You can also use other seasonings, such as salt, pepper, garlic powder, or onion powder.
  • Don't overcook the catfish fillets. Catfish fillets are thin and cook quickly, so it's important not to overcook them. Overcooked catfish will be dry and tough.
  • Serve the catfish fillets with your favorite sides. Cajun baked catfish can be served with a variety of sides, such as rice, potatoes, or salad.

Conclusion:

Cajun baked catfish is a delicious and easy-to-make dish. It's perfect for a weeknight meal or a special occasion. With its crispy crust and flavorful Cajun seasoning, Cajun baked catfish is sure to be a hit with your family and friends.
