This is a recipe that I have been making for years. It's always a favorite. You can tweak the ingredients to your own tastes if you so choose. My brother likes to add minced onions to the saute. It's quick, it's easy & tastes great!

8 ounces angel hair pasta
1/2 lb bacon
1 (6 1/2 ounce) packet tuna in water, may use canned tuna drained
1 tablespoon garlic, minced
black pepper
parmesan cheese

Steps:

  • Fry the bacon in a pan. When bacon is done, drain on papertowels.
  • Keep the bacon grease in the pan. (Note: You can reduce the amount of bacon grease you use if you so choose, just keep enough so it doesn't get dry).
  • Put the tuna and garlic in the pan with the bacon grease and heat over medium heat - stirring occasionally. Do this for approximately 5 minutes.
  • Season with black pepper (optional).
  • Crumble the bacon strips and place back in the pan with the tuna & garlic.
  • Heat for another minute or two.
  • Boil your angel hair pasta.
  • When pasta is done put into a large bowl.
  • Transfer your bacon & tuna mixture from the pan into the bowl of pasta.
  • Toss all ingredients to incorporate all the flavors.
  • Sprinkle with parmesan cheese and serve.

16 oz. wide egg noodles
3 tablespoons unsalted butter
2 tablespoons olive oil, divided
1/3 cup all-purpose flour
3 cups milk
2 cups low sodium chicken broth
1 1/2 tablespoons cornstarch
1 1/2 teaspoons Dijon mustard
1 1/2 teaspoons Worcestershire sauce
2 teaspoons chicken bouillon
1 1/4 teaspoon salt
1 tsp EACH onion powder, garlic powder, dried parsley
1/4 teaspoon pepper
2 cups freshly grated sharp cheddar cheese (divided (or more to taste))
3 oz. freshly grated Gruyere cheese ((1 packed cup))
1/2 cup sour cream
2 cans (7 oz. each) solid white albacore tuna (drained)
2 cups frozen petite peas (thawed)
3/4 cup panko breadcrumbs
1 tablespoon melted butter
1 tablespoon extra virgin olive oil

Steps:

  • NOODLES: Cook the egg noodles in salted water until barely al dente, about 2 minutes less than packaging instructions. Reserve 1 cup pasta water, drain, rinse until cold and set aside.
  • PANKO: Meanwhile, melt 1 tablespoon butter in 1 tablespoon olive oil over medium heat in a nonstick skillet. Add panko and stir to coat. Continue cooking until crumbs become golden brown. Transfer to a plate; set aside.
  • CASSEROLE: Preheat oven to 350 degrees F. Lightly spray a 9x13 pan with nonstick cooking spray.
  • SAUCE: Melt butter with olive oil in a very large skillet or Dutch over medium heat (something that can fit all ingredients). Whisk in flour then cook, while stirring for 2 minutes. Turn heat to low then gradually whisk in milk and 1 ½ cups chicken broth. Whisk cornstarch with remaining chicken broth and add to skillet followed by Dijon, Worcestershire sauce, chicken bouillon and all spices/seasonings.
  • Bring sauce to a boil, whisking constantly then reduce heat to a simmer, whisking often until thickened. Remove from heat and whisk in 1 cup cheddar until melted followed by Gruyere cheese until melted. Whisk in sour cream until blended.
  • COMBINE: Add the tuna and peas and stir to combine. Stir in the noodles until evenly combined. Stir in some of the reserved pasta water IF the sauce has become too thick. Transfer to prepared baking dish and top with remaining 1 cup cheddar cheese followed by panko.
  • BAKE: Cover with foil and bake at 350 degrees for 30 minutes, uncover and bake an addition 10-15 minutes or until hot and bubbly and cheese is melted; serve piping hot. Season with freshly cracked salt and pepper to taste (I like more salt).

1 tablespoon olive oil
1 tablespoon butter
1/2 red onion, chopped
1 red bell pepper, chopped
1 green pepper, chopped
4 garlic cloves, minced
1/4-1/2 teaspoon red pepper flakes (optional)
1/4 cup all purpose flour
2 1/4 cups chicken broth, divided
1 1/2 cups milk (I use lowfat)
2-4 teaspoons Cajun seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
6 pieces cooked turkey bacon (or regular), crumbled
1 10 oz. can diced tomatoes with green chilies, drained
1/2 cup petite frozen peas, thawed
1 5.0 oz can Starkist Albacore Tuna, drained
1/2 cup Parmesan cheese
1/2 cup mozzarella cheese
1/2 cup sour cream (optional)
3/4 cups cheddar cheese + 3 tablespoons, divided
1/4 cup panko breadcrumbs

  • 1.Preheat oven to 375F degrees. 2.Melt butter in olive oil over medium-low heat in a large skillet. Add red onions and sauté 2 minutes. Add red and green bell peppers and saute 1 minute. Add garlic, red pepper flakes and saute 30 seconds. Sprinkle in flour and cook while stirring for 3 minutes, or until raw flour smell is gone. 3.Turn heat to low and slowly whisk in 2 cups chicken broth, then milk, stirring constantly until smooth. This is my version of this popular dish. I use heavy cream, evaporated milk and sour cream for some seriously creamy comfort... add a bit of crispy bacon and I'm in heaven. I've actually left this in the crockpot on warm for up to 5 hours and it works out fine. You just have to under cook the pasta a bit and double or even triple the sauce.

2 -3 teaspoons cajun seasoning
1 -2 tablespoon extra virgin olive oil
3 boneless skinless chicken breasts or 6 chicken breast tenders
4 slices bacon
1/2 large sweet onion, diced
3 garlic cloves, minced
2 tablespoons butter
1 (16 ounce) box rotini pasta, cooked al dente
3 green onions, thinly sliced
1 cup heavy whipping cream
1 (12 ounce) can evaporated milk
1 cup sour cream
4 tablespoons sun-dried tomatoes, chopped (I used the kind packed in oil)
1/2 teaspoon garlic salt
1/2 teaspoon dried basil
1/4 teaspoon black pepper
1/4-1/2 cup parmesan cheese, grated

Steps:

  • Place chicken, olive oil and Cajun seasoning in a bowl and toss to coat. Roast at 425* for 8-10 minutes, or until just done. Allow chicken to rest for 5 minutes, then shred or cube.
  • Cook pasta according to package directions. You want it to be al dente (or even a bit less than al dente if you will be putting it in the crock pot. You will also want to double or triple the sauce ingredients if you are using the crock pot).
  • In a large skillet over medium heat, fry bacon until crisp. Remove to paper towels and drain, then crumble. Saute onions and garlic in butter and bacon drippings until onion is tender and browning, about 5 to 7 minutes.
  • Reduce heat and add heavy cream, evaporated milk, sun-dried tomatoes, basil, garlic salt, and black pepper and allow to simmer and thicken a bit.
  • Stir in hot pasta and allow to cook a couple of minutes without boiling to finish cooking pasta and allow it to absorb the flavors of the sauce. (At this point you could place the mixture in the crock pot on warm along with the shredded chicken).
  • Stir in sour cream, chicken, green onions and parmasean and heat through. Top each serving with crisp crumbled bacon and serve immediately. (If putting int the crock pot, stir in sour cream about 30 minutes before serving--remember to check periodically to see if the pasta is sucking up too much moisture. You may want to add extra cream, milk and sour cream and seasonings. Stir in parmesean and green onions right before serving and top with bacon.).

600g rigatoni
50g butter
50g plain flour
600ml milk
250g strong cheddar, grated
2 x 160g cans tuna steak in spring water, drained
330g can sweetcorn, drained
large handful chopped parsley

Steps:

  • Heat oven to 180C/fan 160C/gas 4.
  • Boil 600g rigatoni for 2 mins less time than stated on the pack.
  • To make the sauce, melt 50g butter in a saucepan and stir in 50g plain flour.
  • Cook for 1 min, then gradually stir in 600ml milk to make a thick white sauce.
  • Remove from the heat and stir in all but a handful of the 250g grated cheddar.
  • Drain the pasta, mix with the white sauce, two 160g drained cans tuna, one 330g drained can sweetcorn and a large handful of chopped parsley, then season.
  • Transfer to a baking dish and top with the rest of the grated cheddar.
  • Bake for 15-20 mins until the cheese on top is golden and starting to brown.

This is a great cheap & cheerful midweek comfort meal that uses basic storecupboard ingredients.

300g pasta such as penne or fusilli
1 tbsp olive oil
150g button mushrooms, sliced
3 rashers smoked back bacon, chopped into small pieces
2x 198g tins of tuna in brine, drained and flaked
100g sweetcorn
1x 400g tin of mushroom soup
150g grated hard cheese such as cheddar
salt & pepper to season

Steps:

  • Preheat the oven to 200C/gas mark 6
  • Cook the pasta according to packet instructions and drain well.
  • Heat the oil in a pan and fry the mushrooms and chopped bacon for 2 - 3 minutes then transfer to a large bowl along with the drained pasta. Add the rest of the ingredients to the bowl, reserving about a 1/3 of the cheese. Mix well.
  • Pour the mix into a large oven dish and top with the rest of the cheese. Place in the oven and cook for 15-20 minutes until the cheese is golden brown on top (you may wish to finish off by browning under the grill for 2 minutes).
  • Remove from oven, garnish with chopped parlsey and serve immediately.

Tips:
