Today, there are many variations on the Caesar salad, but the basic ingredients remain the same: romaine lettuce, croutons, Parmesan cheese, and a creamy dressing made with olive oil, lemon juice, garlic, salt, and pepper. Some recipes also include anchovies, bacon, or hard-boiled eggs.

ASIAN-STYLE SHRIMP CAESAR SALAD
A friend from New Zealand served this to me about 20 years ago. Over the past 10 years I have self-published 8 cookbooks on various subjects and this is absolutely the most-commented on, highest praised recipe of all - for its awesome taste and simplicity. Be sure to use ONLY the Marukan brand Seasoned (orange label) rice vinegar or it just won't taste the same. For a good diet dressing substitute half the oil for water and toss with a green salad.

CAESAR-STYLE SALAD
Steps:
- In a small food processor blend together yogurt, anchovy paste, lemon juice, vinegar, mustard, Worcestershire sauce, garlic paste, 2 tablespoons Parmesan and salt and pepper to taste and transfer to a bowl or jar. Chill dressing, covered, at least 1 hour and up to 2 days.
- Divide romaine among 4 bowls and drizzle dressing over salads. Sprinkle each salad with 1 tablespoon onion and 1/2 tablespoon remaining Parmesan.
Tips:
- Prep Your Greens: Always wash and dry your romaine lettuce thoroughly before assembling your salad. You can also use a salad spinner to remove excess water.
- Use Fresh Ingredients: The quality of your ingredients plays a significant role in the overall taste of your salad. Opt for fresh, crisp romaine lettuce and high-quality Parmesan cheese.
- Make Your Own Dressing: Homemade Caesar dressing is easy to make and tastes far better than store-bought options. You can control the ingredients and adjust the flavor to your liking.
- Use a Large Bowl: A large bowl allows you to properly toss the salad and ensures that all the ingredients are evenly coated with dressing.
- Toss the Salad Gently: Use tongs to toss the salad gently, taking care not to bruise the romaine lettuce. This helps distribute the dressing evenly without breaking the lettuce leaves.
- Serve Immediately: Caesar salad is best served immediately after it's made, as the dressing can wilt the lettuce over time. You can make the dressing and croutons ahead of time and assemble the salad just before serving.
