1 1/2 cups shredded romaine lettuce
1 oz. (1/4 cup) shredded fresh Parmesan cheese
4 kaiser or whole grain buns, split
4 thin slices tomato

Steps:

  • Heat closed contact grill for 5 minutes.
  • Meanwhile, in large bowl, combine ground turkey, parsley, onion salt, pepper and 2 tablespoons of the salad dressing; mix well. Shape mixture into 4 patties, 1/2 inch thick.
  • When grill is heated, place patties on bottom grill surface. Close grill; cook 8 to 10 minutes or until patties are no longer pink in center.

1 garlic clove , crushed
1 anchovy , diced (optional)
juice 1 lemon
3 tbsp grated parmesan
small bunch parsley , finely chopped
3 tbsp low-fat Greek yogurt
18 500g pack lean minced turkey
1 onion , finely chopped
1 romaine lettuce , shredded
4 small wholemeal buns
2 tomatoes , sliced

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mix together the garlic, anchovy, lemon juice, two-thirds of the Parmesan and parsley. Put half in a small bowl, mix with the yogurt and set aside. Mix the other half in a large bowl with the mince and onion, then season. Shape into 4 burgers and place on a roasting tray, then cook for 15-20 mins, until cooked through.
  • Meanwhile, mix the lettuce with the yogurt dressing and slice the buns. To assemble, place the burgers in the buns with some salad and a few tomato slices. Serve the burgers with any leftover salad sprinkled with the reserved Parmesan.

500g pack lean minced turkey see tip, below
1 onion , finely chopped
small pack chives snipped
125ml buttermilk
1 garlic clove , crushed
4 tbsp grated pecorino or Parmesan, plus extra to serve (optional)
2 shakes Tabasco sauce
1 tbsp Worcestershire sauce
1 small ciabatta roll, chopped or torn into chunks
squeeze lemon juice
2 Cos lettuces

Steps:

  • Heat oven to 220C/200C fan/gas 6. In a bowl, mix the mince, onion, half the chives, 1 tbsp of the buttermilk, the garlic, 2 tbsp of the Parmesan, half the Tabasco and half the Worcestershire sauce with some seasoning. Shape into about 20 small meatballs (lightly oiled hands will make this easier).
  • Arrange the turkey balls in a single layer in a roasting tin and cook for 10 mins. Remove, turn the turkey balls and arrange the bread chunks in between. Cook for a further 10 mins.
  • Meanwhile, tip the rest of the buttermilk into a bowl with the remaining Parmesan, Tabasco, Worcestershire sauce and the lemon juice. Season and mix. Put the lettuce on top, toss together just before serving and divide between plates. Top with some meatballs and baked croutons, then sprinkle with chives. Serve with extra Parmesan, if you like.

I think I found this on Kraft's website. I enjoyed it a lot so I thought I'd share it! For the lettuce, I use lettuce from the "bagged salad" that you can get from supermarkets. Any head of lettuce in my two person family goes to waste!

1/2 lb lean ground turkey
6 teaspoons parmesan cheese, divided
1/2 teaspoon italian seasoning
1/4 teaspoon minced garlic clove (I use the jarred kind)
1/8 teaspoon onion powder
1 cup lettuce (shredded)
2 tablespoons caesar salad dressing (I use fat free)
2 tablespoons mozzarella cheese (you can use sliced mozzarella, I use the shredded kind)
2 hamburger buns (I use whole wheat, toasted)

Steps:

  • Mix meat, 4 tsp Parmesan cheese & seasonings. Shape into two patties.
  • Grill (I use my George Foreman; it takes 3-4 minutes) until done.
  • During last minute or so of grilling, top each patty with about 1 tbsp cheese (or a slice of cheese) and let it melt.
  • Toss lettuce with 2 tsp Parmesan & 1 tbsp dressing. Spoon onto bottom part of buns.
  • Top with patty, and spread rest of dressing onto top part of buns. Enjoy!
