Tips:
- Choose the right cabbage: Napa cabbage is the traditional choice for this dish, but you can also use green cabbage or Savoy cabbage. Just be sure to choose a firm head of cabbage with no signs of wilting or bruising.
- Cut the cabbage thinly: This will help it cook evenly and quickly. You can use a sharp knife or a mandoline to slice the cabbage.
- Soak the water chestnuts: This will help to soften them and make them more palatable. You can soak them in cold water for at least 30 minutes, or up to overnight.
- Use a well-seasoned wok: A well-seasoned wok will help to prevent the ingredients from sticking. If you don't have a wok, you can use a large skillet or sauté pan.
- Cook the ingredients in batches: If you're using a small wok or skillet, you may need to cook the ingredients in batches. This will help to prevent them from overcrowding and steaming instead of stir-frying.
- Add the sauce at the end: Stir-fry sauces are typically made with a combination of soy sauce, rice vinegar, and sugar. Adding the sauce at the end of the cooking process will help to prevent the ingredients from becoming too salty or sweet.
Conclusion:
Cabbage with celery and water chestnuts is a classic Chinese stir-fry dish that is both delicious and healthy. It's a great way to use up leftover cabbage, and it's also a good source of vitamins, minerals, and fiber. If you're looking for a quick and easy vegetarian meal, this dish is a great option. Just be sure to follow the tips above to ensure that your stir-fry turns out perfectly.
