6 scallions, thinly sliced
1 red bell pepper, cored and thinly sliced lengthwise
1/2 small head napa cabbage, thinly sliced crosswise
1/2 small head iceberg lettuce, shredded
2 cups (about 4 ounces/115 grams) bean sprouts
One 8-ounce/227-gram can sliced water chestnuts, coarsely chopped
1/2 cup coarsely chopped fresh cilantro leaves
1/2 cup roasted unsalted peanuts or soybeans
1 cup crispy chow mein noodles
2 large navel oranges
2 tablespoons hoisin sauce
2 tablespoons rice wine vinegar
1 teaspoon grated fresh ginger
1 small clove garlic, grated
3 tablespoons vegetable oil
Kosher salt and freshly ground black pepper

Steps:

  • For the salad: Remove the skin from the chicken and shred the meat with a fork. 2 stalks celery, cut in half lengthwise
1 two-inch piece fresh ginger, thinly sliced
2 garlic cloves
8 sprigs cilantro, including stems, roughly chopped (about 3/4 cup), plus 1/2 cup loosely packed leaves for garnish
2 tablespoons toasted sesame oil
Coarse salt
3 boneless, skinless chicken breasts (about 3 pounds)
1 pound somen or vermicelli noodles
1/2 head green cabbage
1 bunch carrots, peeled (about 6 carrots)
2 serrano or jalapeno chiles, seeds and ribs removed
1/2 cup loosely packed fresh mint leaves, chopped
1 cup Peanut Sauce
1/2 cup roasted unsalted peanuts

Steps:

  • In a large saucepan, combine the water with celery, ginger, garlic, chopped cilantro, 1 tablespoon sesame oil, and a pinch of salt; bring to a boil over high heat. Add the chicken breasts, and reduce heat to medium. Simmer until chicken is cooked through, about 12 minutes. Remove from heat, and let stand until chicken is cool enough to handle, about 10 minutes. Transfer the chicken to a cutting board, and cut into 1/4-inch strips, or shred as finely as possible with your fingers. Place in a medium bowl, and set aside.
  • Bring a large pot of water to a boil; add salt. Cook noodles until they are al dente according to package instructions, about 3 minutes. Transfer to a colander, let drain, and rinse under cold water until they are cool. Place in a medium bowl, and toss with remaining tablespoon sesame oil; set aside.
  • Cut cabbage in half, and remove core. Slice cabbage and carrots as thinly as possible with a mandoline or sharp knife. Place in a large bowl. Cut serrano chiles into very thin strips, and add to bowl along with shredded chicken and mint. Just before serving, pour peanut sauce over mixture, and toss to coat. Place noodles on a large serving platter, and pile chicken mixture on top. Sprinkle with peanuts and cilantro leaves.

2 pounds boneless skinless chicken breasts
4 cups finely chopped cabbage
1 medium sweet red pepper, chopped
2 celery ribs, chopped
4 medium nectarines, sliced
DRESSING:
3/4 cup mayonnaise
1/3 cup orange juice
2 teaspoons grated orange zest
1 garlic clove, minced
1/2 teaspoon salt
3/4 cup slivered almonds, toasted

Steps:

  • Coat grill rack with cooking spray before starting the grill. Grill chicken, covered, over medium heat for 5-7 minutes on each side or until juices run clear. Cool. , Cut chicken into thin strips. In a 4-qt. glass salad bowl, layer the cabbage, red pepper, celery, chicken and nectarines. , In a small bowl, combine the mayonnaise, orange juice, orange zest, garlic and salt. Spoon over salad. Sprinkle with almonds. Cover and refrigerate until serving.

1 head cabbage (shredded)
1 cup carrot (shredded)
1 cup green onion (chopped)
1 lb chicken (canned or cooked)
1/2 cup canola oil
1 teaspoon sesame oil
1/2 cup rice wine vinegar
2 teaspoons sugar
3 ounces oriental-flavor instant ramen noodles (uncooked)
1 tablespoon sesame seeds or 1 tablespoon sunflower seeds
1 dash salt
1 dash pepper

Steps:

  • add cabbage, carrots, green onions to a large bowl or dish.
  • add chicken.
  • crunch ramen noodles over the salad. it is easiest to break them up in the bag first.
  • mix together sugar and vineger till sugar is dissolved. add oils and whisk well.
  • pour dressing over salad.
  • top with sesame and/or sunflower seeds.
  • salt and pepper to taste, you can also sprinkle a little of the oriental seasoning from the ramen noodle pack, but not too much.
  • let marinade in fridge for about 2 hours before eating.
  • enjoy!

2 tablespoons store-bought thai peanut sauce

1/2 head cabbage
1 medium carrot, grated
2 green onions

1/4 cup rice vinegar

1 flavor packet from the ramen noodles

  • Combine dressing ingredients; mix well and chill. Combine cabbage, chicken, green onions and carrots. Crumble dry ramen noodles; Sprinkle ramen noodles, almonds and sesame seeds over cabbage mixture. Pour dressing over salad and toss to coat. Let it marinate for 20 minutes before serving.
