Yield Makes 4 servings

Number Of Ingredients 10

1/2 cup vegetable oil
1/4 cup rice vinegar
2 tablespoons oriental sesame oil
1 1/2 tablespoons minced peeled fresh ginger
2 teaspoons soy sauce
6 cups thinly sliced Napa cabbage
6 green onions, very thinly sliced
6 ounces snow peas, stringed, thinly sliced lengthwise
1 large red bell pepper, thinly sliced
1/2 cup roasted peanuts

Steps:

  • Whisk first 5 ingredients in medium bowl to blend. Season with salt and pepper.
  • Mix cabbage and remaining ingredients in large bowl. Toss with enough dressing to coat. Season with salt and pepper. (Can be made 3 hours ahead. Cover; chill.)

Tips:

  • Use a sharp knife or mandoline to thinly slice the cabbage. This will help the coleslaw absorb the dressing better and make it easier to eat.
  • If you don't have a mandoline, you can use a food processor to shred the cabbage. Just be careful not to over-process it, as this can make the coleslaw mushy.
  • For a creamier coleslaw, use mayonnaise instead of vinegar in the dressing. You can also add a little bit of sour cream or yogurt.
  • If you like a spicy coleslaw, add a pinch of cayenne pepper or chili powder to the dressing.
  • For a sweeter coleslaw, add a little bit of honey or maple syrup to the dressing.
  • Coleslaw can be served immediately after it is made, or it can be chilled for a few hours to allow the flavors to meld. It will keep in the refrigerator for up to 3 days.

Conclusion:

Cabbage and peanut coleslaw is a delicious and refreshing side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. Whether you like it creamy, spicy, or sweet, there is a coleslaw recipe out there for you. So next time you are looking for a healthy and flavorful side dish, give cabbage and peanut coleslaw a try.
