Time 29m

Yield 2 dozen

Number Of Ingredients 16

6 tablespoons unsalted butter, room temperature
1/4 cup granulated sugar
1/2 cup brown sugar, packed
1 egg, beaten
1 teaspoon vanilla extract
3/4 cup all-purpose flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon espresso powder or 1 teaspoon finely ground coffee beans
1/4 teaspoon kosher salt
1 pinch cayenne pepper
1/2 cup rolled oats (not instant)
1/2 cup semi-sweet chocolate chips
1/2 cup white chocolate chips
1/2 cup roasted pecan, chopped

Steps:

  • Preheat oven to 350 degrees F. Lightly grease two baking sheets, or line them with parchment paper.
  • Cream together the butter, granulated sugar, and brown sugar until smooth. Add the egg and vanilla and beat until creamy.
  • Whisk together the flour, baking powder, soda, cinnamon, ground coffee, salt and cayenne. Add the dry mixture to the liquid mixture. Stir until well combined. Stir in the oats, both chocolates, and the pecans.
  • Working in batches, form the dough into walnut-size balls (if the dough is too soft, you can place it in the refrigerator for 10 minutes), then place the dough balls 2 inches apart on the prepared baking sheets. Bake, one sheet at a time, for 11 - 14 minutes, or until flattened, lightly browned and set. Cool on the sheet for 5 minutes; then transfer to a wire rack to continue cooling. Repeat for the remaining cookie dough.

Yield 36 cookies

Number Of Ingredients 12

1/2 cup butter, margarine, or shortening
1/2 cup light brown sugar
1/2 cup neutral oil, such as canola
2 eggs or 1/2 cup egg substitute
1 tsp vanilla
2 cups whole wheat flour
1 cup rolled oats
1/4 tsp salt
1 tsp baking soda
1 cup chocolate chips
1 cup dried cranberries
1 cup chopped nuts

Steps:

  • Preheat oven to 350 degrees Cream fat and sugar until light. Add oil, then eggs, then vanilla, beating in each ingredient. Set aside. Combine flour, oats, salt and soda. Add to wet ingredients in thirds. Fold in chips, cranberries and nuts. Using a teaspoon, place on ungreased cookie sheet. Bake 12 minutes. Let rest on sheet on minute, cool on rack.

Tips:

  • Use high-quality ingredients for the best results. Good butter, chocolate, and flour will make a big difference in the taste of your cookies.
  • Make sure your butter is at room temperature before you start baking. This will help the cookies to cream together properly.
  • Don't overmix the dough. Overmixing will make the cookies tough.
  • Chill the dough for at least 30 minutes before baking. This will help the cookies to hold their shape in the oven.
  • Bake the cookies at the correct temperature and for the correct amount of time. Underbaked cookies will be soft and gooey, while overbaked cookies will be dry and crumbly.
  • Let the cookies cool completely before you store them.

Conclusion:

Caballero cookies are a delicious and easy-to-make treat. With a few simple ingredients, you can create a batch of cookies that are perfect for any occasion. Whether you're looking for a sweet snack or a special dessert, Caballero cookies are sure to please.
