¼ teaspoon salt
3 eggs
1 cup milk
1 tablespoon unsalted butter, melted
2 tablespoons unsalted butter, chilled

2 1/2 cups milk
2 1/2 cups all-purpose flour
Pinch of salt
6 large whole eggs
2 large egg yolks
1/4 cup butter, very soft
