GREEN BEANS WITH BROWNED BUTTER

Green Beans with Browned Butter image

Classic green beans get a special touch with browned butter, pecans and lemon peel.

Provided by Betty Crocker Kitchens

Categories     Side Dish

Time 25m

Yield 6

Number Of Ingredients 4

3/4 lb fresh green beans, cut in half
2 tablespoons butter (do not use margarine or vegetable oil spreads)
2 tablespoons chopped pecans
1 teaspoon grated lemon peel

Steps:

  • In 2-quart saucepan, place beans in 1 inch of water. Heat to boiling. Boil uncovered 6 to 8 minutes or until crisp-tender (they shouldn't be "squeaky" when you bite into one); drain. Keep warm.
  • Meanwhile, in 1-quart saucepan, melt butter over low heat. Be careful not to let butter burn or it will taste bitter. Stir in pecans. Heat, stirring constantly, until butter is golden brown. (If bottom of saucepan is dark, it may be difficult to see the difference between brown butter and burnt butter. Try spooning a little of the butter onto a white plate to see the color more clearly.) Immediately remove from heat. Pour butter mixture over beans; toss to coat. Sprinkle with lemon peel.

Tips:

  • Choose fresh green beans: Look for beans that are bright green and crisp. Avoid beans that are wilted or have brown spots.
  • Trim the green beans: Remove the ends of the beans, where they are connected to the plant. You can also remove the strings from the beans if desired.
  • Blanch the green beans (optional): Blanching the beans helps to preserve their color and crispness. To blanch the beans, bring a pot of salted water to a boil. Add the beans and cook for 2-3 minutes, or until they are bright green. Immediately remove the beans from the boiling water and place them in a bowl of ice water to stop the cooking process.
  • Cook the green beans: You can cook the green beans in a variety of ways, such as sautéing, roasting, or steaming. For this recipe, we will be sautéing the beans.
  • Use good quality butter: The type of butter you use will make a big difference in the flavor of the dish. Use unsalted butter so that you can control the amount of salt in the dish.
  • Add pecans and cranberries: Pecans and cranberries add a sweet and nutty flavor to the dish. You can also add other nuts or dried fruits, such as walnuts, almonds, or raisins.
  • Season the green beans: Season the green beans with salt, pepper, and garlic powder to taste.

Conclusion:

Buttery pecan green beans are a delicious and easy-to-make side dish that is perfect for any occasion. With a few simple ingredients and a little bit of time, you can create a dish that will impress your family and friends. The beans are tender and flavorful, and the pecans and cranberries add a touch of sweetness and crunch. This dish is also a great way to get your daily dose of vegetables.
