This is a great way to make peanut brittle. It is not too hard, and is more the texture of crackers. (Easier on the teeth!)

Steps:
- Mix sugar and syrup; cook on high temperature for 4 minutes in microwave.
- Stir in peanuts with a wooden spoon. Cook on high temperature for 4 minutes more.
- Stir in butter and vanilla, and cook 2 minutes on high.
- Take out of oven, and add soda. Stir until mixed well. Work quickly!
- Pour on buttered cookie sheet. Spread as thin as possible.
- Cool before breaking into pieces.

- 1. Heat and stir sugar, syrup,water and butter til sugars dissolved and butter is melted. Bring to a boil. Add peanuts, boil stirring intermittenly until it reaches hard crack stage. Remove from heat and immeadiately stir in baking soda. Pour onto well greased 2 cookie sheets, Strecth thin by lifting and pulling from edges with forks. Loosen from pans as soon as possible. Break up. Makes about 2 1/2 pounds. I have to make 5 or 6 batches each year to satisfy everyone.

- 1. Prepare 1/2 sheet cake pan by buttering it thoroughly. In a small dish stir together the baking soda, vanilla, and butter. Set aside for later use.
- 2. Combine sugar, syrup, and water into an iron skillet. Heat mixture over medium high heat while stirring, until the sugar is dissolved and the mixture starts to boil. Continue cooking while stirring occasionally, until the candy thermometer reaches 295 F (approximately 30 minutes). The time will vary depending on humidity, altitude, etc. This is where patience comes into the mix! *
- 3. Immediately add the peanuts and continue stirring. You have to be quick at this point so the peanuts do not burn! When the thermometer reaches 305 F pour the baking soda mixture into the skillet and stir once or twice. Immediately pour the mixture onto the baking sheet. When the mixture is completely cool, slightly twist the pan to loosen the brittle. Then snap into bite size pieces and enjoy!
