2 (17 ounce) cans yams, well drained or 6 medium yams, cooked, peeled, and quartered
1/2 cup light corn syrup
1/2 cup light brown sugar, firmly packed
1/4 cup half-and-half
2 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon cinnamon
mini marshmallows (optional)

Steps:

  • Preheat oven to 325 degrees.
  • Place yams in large baking dish. Bake in preheated oven for 15 minutes.
  • Meanwhile, in medium saucepan, combine corn syrup, sugar, half-and-half, butter, salt, and cinnamon. Stirring constantly, bring to a boil, and boil for 5 minutes. Pour over yams.
  • Bake, basting often, 15 minutes more.
  • (If you have to have marshmallows on your yams, sprinkle mini marshmallows over finished yams, and broil for 3 minutes or so, until melted and nicely browned.).

1/2 c karo syrup (dark or light) ( i use light maple syrup)
1/2 c brown sugar ( i use splenda brown sugar)
1/4 c cream, canned
2 Tbsp margarine
1/2 tsp salt
1/2 tsp cinnamon

Steps:

  • 1. arrange yams in single layer in 9x13 inch baking dish. in heavy 2 quart saucepan combine remaining ingredients. stirring constantly, bring to a boil.
  • 2. pour over yams and bake in 325 oven for 30 minutes, basting frequently.

In a small bowl combine brown sugar, butter or margarine, flour and nutmeg. Sprinkle over potatoes.Sprinkle with pecans. Bake for 15 minutes or until hot and bubbly. Broil 5 inches from heat source for 2 minutes or until golden.
