Steps:
- Put the butter in a medium saucepan and add both sugars. Cook over medium heat until the butter is melted, whisking to combine, then cook, stirring constantly with a heatproof spatula or a wooden spoon, until the butterscotch begins to smoke, 5 to 10 minutes. Reduce the heat to medium-low and continue cooking and stirring until the butterscotch is very dark and registers 300°F (150°C)-or very slightly above-on an instant-read thermometer, about 10 minutes.
- Remove from the heat and very carefully whisk in the water to stop the cooking. Whisk in the cream, then whisk in the milk, rum, if using, and salt. Gently reheat over low heat, stirring (the acid in the sugars will cause the mixture to break if overheated). Drink right away, or pour into a Thermos for sipping later.
- Do Ahead: The butterscotch drink can be made ahead, cooled, transferred to a lidded container, and refrigerated for up to 5 days. Reheat as instructed in step 2 above.

BUTTERSCOTCH RUM SAUCE
Steps:
- In a small heavy saucepan combine the brown sugar, the corn syrup, the butter, and a pinch of salt, cook the mixture over moderate heat, stirring and washing down any sugar crystals clinging to the side with a brush dipped in cold water, until the sugar is dissolved, and boil it, undisturbed, for 12 minutes, or until a candy thermometer registers 280°F. Remove the pan from the heat and stir in the cream, the vanilla, the lemon juice, the rum, and the pecans. Serve the sauce warm or at room temperature. The sauce keeps, chilled, for 2 months.

Tips:
- Mise en place (Prep Work): Before you start cooking, take a few minutes to prepare your ingredients. This will make the cooking process go much smoother.
- Use a Heavy Saucepan: A heavy saucepan will help to evenly distribute the heat and prevent the mixture from scorching.
- Stir Constantly: Stir the mixture constantly to prevent it from sticking to the bottom of the pan and burning.
- Use a Candy Thermometer: A candy thermometer is essential for making this recipe. It will help you to ensure that the mixture reaches the correct temperature.
- Let the Mixture Cool: Before adding the rum or vanilla extract, let the mixture cool slightly. This will help to prevent the alcohol from evaporating.
- Serve Immediately: This dip is best served immediately after it is made. However, it can be stored in the refrigerator for up to 2 weeks.
