LOW-FAT BUTTERSCOTCH OATMEAL PECAN COOKIES

Low-Fat Butterscotch Oatmeal Pecan Cookies image

Wow these are good for being low-fat! Sometimes to make them even healthier, I replace half the flour with whole wheat flour, and I use 1/4 cup honey to replace half of the light corn syrup. These do not spread out at all. They are wonderful things to pop in your mouth when you want something sweet. This is a variation from Tribole's "Healthy Desserts"

Tips:

  • Use good quality oats. Rolled oats are the best type to use for these cookies, as they will provide a chewy texture. If you only have instant oats, you can use them, but the cookies will be less chewy.
  • Don't overmix the dough. Overmixing the dough will make the cookies tough. Mix the ingredients just until they are combined.
  • Chill the dough before baking. Chilling the dough for at least 30 minutes will help the cookies hold their shape and prevent them from spreading too much in the oven.
  • Bake the cookies at a high temperature. Baking the cookies at a high temperature will help them to brown and develop a crispy exterior.
  • Let the cookies cool completely before storing them. The cookies will continue to set as they cool, so it's important to let them cool completely before storing them in an airtight container.

Conclusion:

These butterscotch pecan oatmeal cookies are a delicious and easy-to-make treat that are perfect for any occasion. They are chewy, flavorful, and packed with pecans and butterscotch chips. Whether you are a fan of oatmeal cookies or not, you are sure to love these cookies. So next time you are looking for a sweet treat, give these butterscotch pecan oatmeal cookies a try!
