1/2 cup shortening
2 eggs
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour

1 cup 2% milk
1 cup chopped pecans
PENUCHE FROSTING:
1/2 cup butter, cubed
2 cups packed brown sugar
1/2 cup 2% milk
1/2 teaspoon salt
1 teaspoon vanilla extract
3 cups confectioners' sugar

Steps:

  • In a large bowl, cream brown sugar and shortening until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and salt; add to the creamed mixture alternately with milk, beating well after each addition. Stir in pecans., Transfer to a greased 13x9-in. baking pan. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack., For frosting, in a small saucepan, melt butter. 1/3 cup brown sugar, firmly packed
1/4 cup heavy cream
1 1/2 cups confectioners' sugar (6 oz)

  • Melt butter in a heavy saucepan over med-low heat.
  • Add brown sugar and stir constantly with wooden spoon.
  • After 2-3mins, sugar will melt and mixture will become smooth, then begin to bubble (it's ok if it looks separated at this point).
  • Once this happens, stir constantly for 2mins (less if sugar smells like it's burning).
  • Carefully add cream and stir for another 2mins.
  • Mixture will thicken slightly and look smooth and glossy.

2-1/2 cups whipped topping

  • Prepare and bake cake according to package directions for two 9-in. round baking pans. Cool for 10 minutes before removing from pans to wire racks to cool completely., Meanwhile, in a small saucepan, combine the brown sugar, butter and cream.
