I got this recipe from a childrens cookbook. Original recipe called for peanutbutter chips, but we just love butterscotch. If anybody has peanut allergies you can leave out nuts. The salt or seasalt is a must for these sweet and salty treats.

1 Tbsp canola oil
1 11 oz bag butterscoth morsels
1/2 tsp salt
1 c peanuts
2 c chowmein noodle
mini cadberry eggs

Steps:

  • 1. Combine oil, salt and butterscoth in microwave bowl. Microwave on 30 min interval til melted.
  • 2. Combine nuts and chowmien noodles in bowl. Pour butterscoth over noodle nut mixture and combine. Form into 2inch nests. Spray hand with cooking spray so doesnt stick. Place on waxed paper. Allow to cool for 10 minutes.
  • 3. Add eggs to top. Store in container.

My aunt introduced me to these fun little snacks. We made them for Easter and it was a perfect treat, not to mention a hit with everyone! The recipe can be tweaked to however you like your nests, and it is all based on personal preference.

1 (12 oz.) pkg butterscotch chips
1 large can(s) chow mein noodles
1 pkg candy eggs (i used the "robin's eggs")

Steps:

  • 1. Put the butterscotch chips in a glass bowl and melt in the microwave. The amount is completely optional, I used the entire bag.
  • 2. Once the chips are melted, stir in the chow mein noodles.
  • 3. On a piece of parchment paper, take a small scoop of the chow mein noodle mixture and form a small nest with your hands. Place the eggs on top.
  • 4. Do not refrigerate, just leave uncovered on parchment paper to dry.

Tips:

  • Use a heavy-bottomed saucepan to make the butterscotch sauce to prevent scorching.
  • Continuously stir the sauce until it reaches the desired consistency to prevent it from becoming too thick or too thin.
