- 5. Add coconut and nuts (if using). Mix in well. The batter will be very stiff.

- 7. Bake in preheated oven for 25-35 minutes or until a toothpick comes out clean.
- 8. Let cool on a wire rack. After 5-10 minutes, cut into squares while brownies are still somewhat warm.

Tips:
- Use high-quality butter for the best flavor and texture.
- Cream the butter and sugars together until light and fluffy. This will help the cookies to be chewy and tender.
- Don't overmix the dough. Overmixing will make the cookies tough.
- Chill the dough for at least 30 minutes before baking. This will help the cookies to hold their shape and prevent them from spreading too much.
- Bake the cookies until they are just set around the edges, but still slightly soft in the center. Overbaking will make the cookies dry and crumbly.
- Let the cookies cool completely before frosting, if desired. This will help to prevent the frosting from melting.

With their chewy texture, rich butterscotch flavor, and optional chocolate frosting, these cookie bars are sure to be a hit with everyone who tries them. So next time you're looking for a sweet and satisfying treat, give these butterscotch cookie bars a try.
