  • Preheat the oven to 400 degrees F.
  • Cut off and discard the ends of each butternut squash. Peel the squash, cut them in half lengthwise, and remove the seeds. Cut the squash into 1 1/4 to 1 1/2-inch cubes and place them on a baking sheet. Add the melted butter, brown sugar, salt, and pepper. With clean hands, toss all the ingredients together and spread in a single layer on the baking sheet. Roast for 45 to 55 minutes, until the squash is tender and the glaze begins to caramelize. 14 ounces sweetened condensed milk
1/2 cup sugar
2 eggs
1 tablespoon white vinegar
14 ounces milk
1/2 teaspoon vanilla or 1/2 teaspoon vanilla butternut flavoring

  • First preheat your oven to 350 degrees.
  • Second prepare caramel sauce
  • Step 1 In a sauce pan add your sugar and vinegar stir until its a caramel color as dark or light as you like
  • Step 2 Pour the sauce which will harden in your individual dishes or one round or square pyrex pan

4 large eggs plus 2 yolks
2 cups half-and-half
1 1/8 ounce finely grated Parmigiano-Reggiano (1/2 cup plus 2 tablespoons)

  • Put oven rack in middle position and preheat oven to 400°F.

1 small butternut squash (about 1 1/2 pounds), halved length-wise and seeded
1 1/2 cups whole milk
4 large egg whites
2 large eggs
1/4 cup maple syrup
3 tablespoons pure vanilla extract
1 1/2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves

Steps:

  • Preheat oven to 350° F. Line large-rimmed baking sheet with parchment paper or nonstick liner.

Add egg whites, eggs, maple syrup, vanilla, ginger, cinnamon, nutmeg, cloves and process until smooth, about 30 seconds to 1 minute.
  • Divide batter evenly among 18 (3-ounce) or 9 (5-ounce) ramekins or custard cups. Place ramekins in large roasting pan and add enough hot water to pan to come halfway up sides of ramekins. Cover entire pan with foil and bake until flans are set in the middle, 22 to 25 minutes for 3-ounce ramekins or 32 to 35 minutes for 5-ounce ramekins.
  • Transfer roasting pan to cooling rack and let flans rest in water, uncovered, until room temperature, then remove ramekins from water and refrigerate until thoroughly chilled, about 3 hours.

1 vegetable bouillon cube
2 tablespoons cornstarch
1 large onion, chopped
2 tablespoons butter
2 tablespoons parmesan cheese
1 cup ham, finely chopped
3 cups butternut squash, cooked and pureed
4 large eggs
1/4 teaspoon pepper
1/4 teaspoon nutmeg

Steps:

  • Melt butter and cooked onion on medium heat until golden brown and caramelized.
  • Warm up the milk and dissolve the bouillon cube in it.
  • Boil the milk and add the cornstarch previously dissolved in a ¼ cup of cold milk.
  • Stir and cook for 3 minutes.
  • Remove from heat and add the onion, Parmesan cheese, chopped ham and squash puree.
  • Mix well and let it come to room temperature.
