Number Of Ingredients 11

1 (1 1/2) pound butternut squash
Extra virgin olive oil
Sea salt to taste
Ground black pepper to taste
¼ cup creme fraiche
¼ teaspoon smoked paprika
1 French baguette
1 medium head radicchio
2 tablespoons balsamic glaze (reduced balsamic vinegar)
½ cup crumbled blue cheese, plus more for garnish
Reynolds Wrap® Aluminum Foil

Steps:

  • Preheat the oven to 425 degrees F. Line 2 baking sheets with Reynolds Wrap® Aluminum Foil. Set aside.
  • Cut the squash in half lengthwise and remove the seeds. Brush the flesh with a thin coat of olive oil. Set the squash cut side up on the prepared tray. Sprinkle with salt and pepper and roast for 40 minutes until the squash is fork tender. Remove to cool completely.

Tips:

  • Choose ripe, flavorful butternut squash: Look for squash that is heavy for its size, has a deep orange color, and a smooth, unblemished skin.
  • Roast the butternut squash until tender and slightly caramelized: This will bring out its natural sweetness and flavor.
  • Use a good quality radicchio: Look for heads that are firm and have deep red leaves.
  • Toast the crostini until golden brown and crispy: This will help them hold up to the toppings.
  • Use a flavorful blue cheese: A sharp, tangy blue cheese will complement the other flavors in this dish.
  • Assemble the crostini just before serving: This will prevent the crostini from getting soggy.

Conclusion:

Butternut squash crostini with radicchio and blue cheese is a delicious and easy-to-make appetizer that is perfect for any occasion. The roasted butternut squash is sweet and flavorful, the radicchio adds a bitter note, and the blue cheese provides a salty, tangy finish. These crostini are sure to be a hit with your guests!
