Buttermilk Pie - from Porch Pies - Pies to the Stars image

This is the recipe used by Robyn Poarch, an Alabama girl now living in Los Angeles and making pies for the stars. Her clients include Courtney Cox, Ben Stiller, Laura Dern and Steven Spielberg. When asked to describe a buttermilk pie, she says it's kind of like a Southern creme brulee. The crust needs to be nice and cold going into the oven to make it work. The colder the crust the better. This recipe is older than I am...and I was born in 1919! My mother and grandmother made this pie with buttermilk and eggs from our farm and set it on the tables at church meetings and social gatherings. I did the same and now our children make it, too! -Kate Mathews, Shreveport, Louisiana

Tips:

  • Use high-quality buttermilk: The fresher the buttermilk, the better the pie will taste. If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of regular milk and letting it sit for 5 minutes.
  • Don't overmix the batter: Overmixing the batter will make the pie tough. Mix just until the ingredients are combined.
  • Use a deep-dish pie plate: Buttermilk pies are known for their tall, fluffy filling, so a deep-dish pie plate is essential.
  • Bake the pie in a preheated oven: This will help to ensure that the pie cooks evenly.
  • Let the pie cool completely before serving: Buttermilk pies are best served cold, so give it plenty of time to cool before slicing and serving.

Conclusion:

Buttermilk pies are a delicious and classic Southern dessert. They are easy to make and can be enjoyed by people of all ages. With its creamy, tangy filling and flaky crust, buttermilk pie is sure to be a hit at your next gathering. So next time you're looking for a sweet treat, give buttermilk pie a try.
