1/4 cup warm water (110 to 115)
1 1/2 cups warm buttermilk (110 to 115)
1/2 cup vegetable oil
3 tablespoons sugar
4 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • In a large mixing bowl, dissolve yeast in warm water. Add buttermilk, oil and sugar. Combine flour, baking soda and salt; add to yeast mixture and beat until smooth. Do not knead. Let stand for 10 minutes.
  • Turn dough onto a lightly floured surface; punch down. Shape into 24 balls and place in two greased 9-inch square baking pans. Cover and let rise in a warm place until doubled, about 30 minutes. Bake at 400° for 20 minutes or until golden brown. Remove to wire racks.

1/4 c warm water(110-115 degrees)
1 1/2 c warm buttermilk(110-115 degrees)
1/2 c vegetable oil (canola)
3 Tbsp sugar
4 1/2 c flour
1 tsp soda
1/2 tsp salt

Steps:

  • 1. In a large mixing bowl,dissolve yeast in warm water. Add warm buttermilk,oil,and sugar. Combine flour, baking soda,salt. Add to yeast mixture and beat until smooth.(in mixer with dough hooks)DO NOT KNEAD! Let stand 10 min. Turn dough onto a slightly floured surface. Punch down. Shape into 24 balls and place in 2 greased 9" square baking pans. Cover and let rise in a warm place until doubled (about 30 min.)

18 to 23 cups all-purpose flour
1 cup buttermilk blend powder
1/2 cup sugar
2 tablespoons salt
4-1/2 teaspoons active dry yeast
1 teaspoon baking soda
7 cups warm water (120° to 130°)
1 cup vegetable oil

Steps:

  • In several large bowls, combine 15 cups flour, buttermilk powder, sugar, salt, yeast and baking soda. Add water and oil. Beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 10 minutes. Place in several large greased bowls, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/4 hours. , Punch dough down. Divide into 80 pieces. Shape each into a ball. Place in two greased 15x10x1-in. baking pans.
