1 (1oz.) envelope ranch salad dressing and seasoning mix
2 cups buttermilk
1 (8.5 oz) box corn muffin mix
1 tsp salt
1 tsp pepper
1 tsp paprika
1/4 tsp cayenne

  • Combine chicken, ranch seasoning, and buttermilk in a large ziploc bag. Turn the bag over several times to ensure the chicken is coated with the ranch and buttermilk and place in the refrigerator. Refrigerate for the entire day or at least one hour. Preheat the oven to 425F. Spay a large baking sheet with cooking spray and set aside. Combine corn muffin mix and seasonings in a shallow bowl. Remove the chicken pieces one at a time an shake off the excess buttermilk. Dip the chicken in the breading, turning to evenly coat. Shake off excess and place chicken, bone side down, on the prepared baking sheet. Repeat for remaining chicken pieces. Lightly spray the top of each piece of chicken with cooking spray. 8 chicken pieces (I used boneless skinless thighs)
3/4 cup buttermilk (or milk with 1 tsp lemon juice)
1/2 cup all-purpose flour
2 tablespoons parsley
1 teaspoon oregano
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup shortening
1/4 cup butter
1/4 cup chicken broth

Steps:

  • Place chicken in 3 quart rectangle baking dish. Pour buttermilk over chicken. Cover and let stand in fridge for 30 minutes to 1 hour. About 10 minutes before removing from fridge stir together flour, parsley, oregano, salt and pepper.
  • Remove chicken from dish, leave the buttermilk in the pan. Coat the chicken with flour mixture.
  • In a large skillet, melt shortening and butter. Brown chicken, turning only once (I usually let it go for 10 minutes per side). Drain. Transfer back to the baking dish. Add chicken broth to the drippings in the skillet. Pour evenly over the chicken. Bake uncovered at 375° for 50 minutes or until chicken is no longer pink.

1 broiler-fryer chicken, cut up. I also use boneless skinless chicken breasts with a shorter cook time
1/2 cup parmesan cheese
1/2 cup wheat germ
1/2 teaspoon dried rosemary
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon dried thyme
1/4 teaspoon garlic powder
1/8 teaspoon fresh ground pepper
3/4 cup buttermilk

Steps:

  • Place chicken in buttermilk.
  • Combine all remaining ingredients in shallow dish.
  • Remove chicken from buttermilk, roll it in dry mixture, and place it in baking pan that has been coated with cooking spray.

2 cups fine, dry bread crumbs
2 teaspoons paprika
1 teaspoon mustard powder
1/2 teaspoon cayenne pepper
11/2 teaspoons salt
1/2 teaspoon black pepper
1/4 cup vegetable oil
3 tablespoons unsalted butter, melted

Steps:

  • 1. In a bowl, combine chicken, buttermilk, salt, and black pepper. Make sure the chicken is coated all over with the buttermilk. Cover and refrigerate for at least 2 hours or for up to a day. 2. Set the oven at 400 degrees. Set a large wire rack in a rimmed baking sheet. Brush it with oil. 3. In a gallon-size zipper bag, combine the panko, dry bread crumbs, paprika, mustard powder, cayenne pepper, salt, and black pepper. Shake well. Add the 1/4 cup oil and melted butter and mix together with your fingers. 4. Working with 1 piece of chicken at a time, use tongs to lift the chicken from the bowl, letting the excess buttermilk drip back into the bowl. Place the chicken piece in the bag of crumbs and turn to coat it on all sides, shaking off the excess. Transfer to the wire rack. Continue coating the remaining pieces of chicken. 5. Bake the chicken for 40 minutes, or until the coating is deep, golden brown, and the juices run clear when a knife is inserted into the thickest part of a thigh. Set aside 4 thighs for the sandwiches. Serve the remaining chicken with coleslaw.
