EASY BUTTERMILK DELUXE MACARONI & CHEESE
I wanted to make a small amount mac & cheese but only had Light buttermilk, not regular milk. Then I figured it would work just as well and better yet wouldn't require butter. The buttermilk did work fabulously! This is a creamy, gooey kind of mac & cheese similar to Velveeta mac & cheese , not the baked crusty kind.

Tips:
- Choose the right noodles. Elbow macaroni is the classic choice for mac and cheese, but you can also use other short pastas like penne, shells, or rotini. For a more sophisticated dish, try using a long pasta like spaghetti or linguine.
- Use a good quality cheese. The cheese is the key ingredient in mac and cheese, so it's important to use a good quality cheese that melts well. Cheddar is the most popular choice, but you can also use other cheeses like Gruyère, Parmesan, or Fontina.
- Make a roux. A roux is a mixture of butter and flour that helps to thicken the sauce. It's important to cook the roux until it is golden brown, as this will give the sauce a richer flavor.
- Use buttermilk. Buttermilk adds a tangy flavor to mac and cheese, but you can also use regular milk if you don't have buttermilk on hand.
- Add some extras. You can add all sorts of extra ingredients to mac and cheese to make it more flavorful. Some popular options include bacon, ham, vegetables, and spices.
