Steps:
- Sift together flour, cornmeal, sugar, baking powder and salt.
- Add eggs, milk and oil or melted shortening. Beat until just smooth-do not overbeat.
- Turn into a greased 9x9x2 inch baking pan. Bake in a 425: oven for 20-25 minutes.
- Can add drained corn, bacon, finely chopped jalapeno peppers etc. for a different taste.
Tips:
- Use fresh corn: Fresh corn adds a sweet and juicy flavor to the cornbread. If you don't have fresh corn, you can use frozen or canned corn, but the flavor will be less pronounced.
- Don't overmix the batter: Overmixing the batter will make the cornbread tough. Mix just until the ingredients are combined.
- Use a hot oven: A hot oven will help the cornbread rise and brown properly. Preheat the oven to the temperature specified in the recipe before baking.
- Serve warm: Cornbread is best served warm out of the oven. You can also toast it or reheat it in the oven or microwave.
Conclusion:
Buttermilk Jalapeno Cornbread is a delicious and versatile bread that can be enjoyed as a side dish, snack, or even breakfast. It's easy to make and can be customized to your liking. With its slightly tangy flavor and a hint of spice from the jalapenos, this cornbread is sure to be a hit with your family and friends.
