4 cups flour
2 teaspoons baking soda
1 teaspoon salt
1/2 cup vegetable oil
1 1/2 cups sugar
2 cups buttermilk
2 eggs
1 tablespoon ground cinnamon
1 cup sugar
2 tablespoons walnuts, finely chopped

Steps:

  • Mix flour, baking soda and salt in a large bowl.
  • In a small bowl combine oil and sugar; add buttermilk and eggs and mix well; stir into dry ingredients just until moistened.
  • Fill 2 greased 8"x4"x2" loaf pans (or five 5"x2 1/2" mini loaf pans) about 1/3 full.
  • Combine cinnamon and remaining 1 cup sugar; sprinkle half over the batter; top with remaining batter and cinnamon-sugar; swirl batter with a knife; sprinkle with nuts.
  • Bake at 350°, 45-55 minutes or until toothpick comes out clean; cool in pans for 10 minutes before removing to a wire rack.

4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1/2 cup vegetable oil
2-1/2 cups sugar, divided
2 cups buttermilk
2 eggs
1 tablespoon ground cinnamon
1 to 2 tablespoons finely chopped walnuts

Steps:

  • In a large bowl, combine flour, baking soda and salt. In a small bowl, combine oil and 1-1/2 cups sugar. Add buttermilk and eggs; mix well. Stir into dry ingredients just until moistened. Fill two greased 8x4-in. or five greased 5-3/4x3x2-in. loaf pans about a third full. Combine cinnamon and remaining sugar; sprinkle half over the batter. Top with remaining batter and cinnamon-sugar. Number Of Ingredients 14

4 c all purpose flour
2 tsp baking soda
1 tsp salt
1/2 c vegetable oil
1 1/2 c sugar
2 c buttermilk
2 eggs
CINNAMON-SUGAR MIXTURE
1 c sugar
1 Tbsp cinnamon
GLAZE
2 c powdered sugar
3 Tbsp milk
1/2 tsp vanilla

Steps:

  • 1. Preheat oven to 350 degrees
  • 2. Combine 1 cup sugar with 1 T. Cinnamon and set aside
  • 3. In large bowl, mix flour, baking soda and salt. Set aside.
  • 4. In a small bowl, combine oil and 1-1/2 c. Sugar. Add buttermilk and eggs to oil mixture - mix well.
  • 5. Stir oil mixture into dry ingredients in the large bowl - just until moistened.
  • 6. Spray 2 loaf pans with Pam. Fill each loaf pan about 1/3 full of batter. .
  • 7. Sprinkle 1/4 of the reserved cinnamon mixture over each pan of batter
  • 8. Top each loaf pan with remaining batter
  • 9. Sprinkle 1/2 of remaining cinnamon mixture evenly over batter in each loaf pan.
  • 10. With a butter knife, insert knife into batter at one end of loaf pan, thru both layers of cinnamon, and swirl knife thru batter working down to the opposite end of the loaf pan.
  • 11. Bake for 44-55 min. At 45 min., check bread to see if it is done.
  • 12. Cool in pans 10 minutes before taking out of pans. After removing from pans, place on racks to completely cool.
  • 13. Once loaves have cooled, combine powdered sugar, milk and vanilla. Mix to consistency you can spoon over loaves. Add more sugar or milk to obtain right consistency. Drizzle in zip-zag pattern over loaves.

  • Use fresh buttermilk for a tangy flavor. If you don't have buttermilk on hand, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of regular milk and letting it sit for 5 minutes.
