Yield 6 to 8 servings

Number Of Ingredients 24

1 medium red onion, cut into 1-inch pieces
1 medium yellow squash, cut into 1-inch pieces
1 medium zucchini, cut into 1-inch pieces
3 carrots, peeled and cut into 1-inch pieces
3 parsnips, peeled and cut into 1-inch pieces
1 small butternut squash, peeled, seeded and cut into 1-inch pieces
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil, plus more for drizzling
1 batch Italian Cornbread, recipe follows
1 tablespoon red wine vinegar
8 ounces small mozzarella balls
8 fresh basil leaves, cut into chiffonade
1 cup yellow cornmeal
1/2 cup all-purpose flour
1 tablespoon baking powder
1 teaspoon kosher salt
1 cup buttermilk
1/2 cup milk
1 large egg
1/2 teaspoon baking soda
1/2 cup grated Parmesan
2 tablespoons diced sun-dried tomatoes
1/2 teaspoon dried oregano
1/4 cup plus 2 tablespoons shortening

Steps:

  • Preheat the oven to 350 degrees F.
  • Put the onion, yellow squash and zucchini on a baking sheet. Put the carrots, parsnips and butternut squash on another baking sheet. Season the vegetables with salt and pepper and drizzle with some olive oil. Toss to coat and spread out into a single layer.
  • Roast the vegetables until tender and brown around the edges, 25 to 30 minutes for the onion pan and 40 to 45 minutes for the carrot pan. Remove from the oven and let cool.
  • Meanwhile, cut the Italian Cornbread into 1-inch cubes, arrange on a baking sheet and drizzle lightly with olive oil. Bake to slightly crisp the bread without toasting it, 10 to 15 minutes. Set aside to cool.
  • In a small jar, shake together 1/4 cup olive oil, the vinegar and some salt and pepper.
  • Put the cooled cornbread and vegetables in a large bowl. Pour over the dressing, tossing gently to combine. Add the mozzarella balls and some salt and pepper and mix. Add the basil and toss again. Cover and allow to sit at room temperature for 1 to 2 hours before serving. Sprinkle with more salt and pepper and serve.
  • Preheat the oven to 450 degrees F.
  • Combine the cornmeal, flour, baking powder and salt in a bowl and stir together.
  • Measure the buttermilk and milk into a measuring cup and add the egg. Stir together with a fork. Add the baking soda and stir. Add the Parmesan, sun-dried tomatoes and oregano and mix together. Pour the milk mixture into the dry ingredients and stir with a fork until combined.
  • In a small microwave-safe bowl, melt 1/4 cup shortening in the microwave. Slowly add the melted shortening to the batter, stirring until just combined.
  • In a 10-inch cast-iron skillet, melt the remaining 2 tablespoons shortening over medium heat. Pour the batter into the hot skillet (the batter should sizzle) and spread to even out the surface. Cook on the stove top for 1 minute, then transfer to the oven and bake until golden brown, 20 to 25 minutes. The edges should be crispy!

Number Of Ingredients 9

One 8- to 10-pound fresh or defrosted frozen turkey, not kosher or self-basting
1/3 cup kosher salt
1 tablespoon sugar
1 teaspoon freshly ground black pepper
Several sprigs fresh herbs, such as thyme, parsley, rosemary or sage
2 bay leaves
1 head garlic, halved
1 medium onion, quartered
1 stick (8 tablespoons) unsalted butter, melted

BUTTERFLIED TURKEY WITH YUCATAN RUB

Butterflied Turkey with Yucatan Rub image

Before grilling, brine and marinate the turkey overnight in a vibrant rub made with citrus, annatto paste, oregano, coriander and other fragrant spices. Annatto paste is widely used in the Yucatan region of Mexico and gives this bird its deep golden color that will impress everyone at your table.

Provided by Food Network Kitchen

Categories     main-dish

Time 14h10m

Yield 6 to 8 servings

Number Of Ingredients 14

1 gallon water
2 cups kosher salt
1 cup firmly packed light brown sugar
1 (8 to 10-pound) turkey, butterflied (back and breast bone removed by your butcher)
1/2 cup annatto paste (see ShopSmart, below)
8 cloves garlic, peeled and smashed
3 tablespoons dried oregano, preferably Mexican
1 1/2 teaspoons ground coriander
1 1/2 teaspoons freshly ground black pepper
3/4 teaspoon kosher salt
1/4 teaspoon ground allspice
Juice of 3 limes (a scant 1/2 cup)
Juice of 1 orange (about 1/3 cup)
3 tablespoons extra-virgin olive oil

Steps:

  • For the turkey: The day before serving, heat 3 quarts of the water with salt and sugar in a large pan, stirring to dissolve salt and sugar. Remove from heat, add remaining 1 quart cold water, and stir. Set brine aside to cool to room temperature.
  • Put turkey in a large container and cover with the brine. Cover and refrigerate for 4 to 5 hours. (If you want to brine the turkey overnight, use half the amount of salt and sugar.)
  • For rub: Crumble annatto paste into a food processor and blend with the garlic, oregano, coriander, black pepper, salt, and allspice. Add the fruit juices and the olive oil and process to make a pasty sauce. Drain and pat the turkey very dry. Smear the rub all over the bird. Cover and refrigerate overnight.
  • Prepare an outdoor grill with a large medium-heat fire for direct and indirect grilling. Position a drip pan under the grate on indirect side of the grill.
  • Place turkey, breast side up, over the drip pan and grill, covered, until meat is cooked about halfway through, about 50 minutes. Turn and cook until an instant-read thermometer inserted in the thigh registers 170 degrees F, about 50 minutes more. Move turkey to direct heat and rotate to evenly brown the skin in the last 10 minutes of cooking. Transfer to a carving board, cover, and let rest 10 minutes before carving.
  • Shopsmart: Annatto paste is a Mexican flavoring composed of ground annatto, or achiote, seeds mixed with herbs-usually oregano-and spices. The rust-color paste is then pressed into a compact brick. Look for it in the Hispanic section of your grocery.

ROASTED TURKEY AND ROOT VEGETABLES

Roasted Turkey and Root Vegetables image

Provided by Jeff Mauro, host of Sandwich King

Categories     main-dish

Time 9h15m

Yield 4 to 6 servings

Number Of Ingredients 13

One 2- to 3-pound bone-in, skin-on split turkey breast
BBQ Chip Dust, recipe follows
8 ounces parsnips, cut into 2-inch chunks
8 ounces sweet potatoes, cut into 2-inch chunks
8 ounces baby potatoes
2 tablespoons avocado oil
2 teaspoons light brown sugar
2 teaspoons kosher salt
2 teaspoons dry ancho chile powder
1 teaspoon granulated garlic powder
1 teaspoon coarsely ground black pepper
1 teaspoon onion powder
1/2 teaspoon cayenne pepper

Steps:

  • Coat the entire turkey breast in about half of the BBQ Chip Dust. Place on a sheet pan fitted with a rack and let it dry brine in the fridge, uncovered, for 8 hours and up to overnight.
  • Install an air fryer searing plate in an air fryer and set the temperature to 400 degrees F for 35 minutes for the plate to preheat.
  • In a large bowl, toss the parsnips, sweet potatoes and baby potatoes with the avocado oil. Sprinkle with the remaining BBQ Chip Dust and toss until coated.
  • Remove the searing plate and place the turkey breast skin-side down on one side. Arrange the vegetables on the other side. Cook until the turkey skin is golden brown, about 5 minutes (see Cook's Note). Flip the turkey breast and continue cooking until an instant-read thermometer inserted into the thickest part of the breast registers 165 degrees F and the root vegetables are tender, 35 to 40 minutes. Let the turkey rest for 10 minutes.
  • Carefully remove the rib bone (if there is one) from the turkey breast and carve. Serve with the root vegetables.
  • Combine the brown sugar, salt, chile powder, garlic powder, black pepper, onion powder and cayenne in a small bowl and mix until blended. Use immediately or transfer to an airtight resealable container.

Tips:

  • Brining the Turkey: Dry brining is a great way to ensure a juicy and flavorful turkey. Make sure to pat the turkey dry before applying the brine, and allow it to rest uncovered in the refrigerator for at least 12 hours, or up to 24 hours.
  • Roasting the Turkey: Roast the turkey breast-side up on a roasting rack in a preheated oven at 350°F (175°C). Baste the turkey with melted butter or olive oil every 30 minutes to keep it moist. Cook the turkey until a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C).
  • Roasting the Vegetables: While the turkey is roasting, toss the root vegetables with olive oil, salt, and pepper. Roast the vegetables in a preheated oven at 425°F (220°C) for 20-25 minutes, or until tender and slightly browned.
  • Making the Panzanella: Combine the roasted vegetables, arugula, and bread cubes in a large bowl. Drizzle with olive oil and vinegar, and season with salt and pepper to taste.
  • Serving the Turkey and Panzanella: Carve the turkey and serve it with the roasted vegetables and panzanella. Enjoy!

This roasted turkey with roasted root vegetable panzanella is a delicious and impressive dish that is perfect for a holiday meal. The dry brined turkey is juicy and flavorful, the roasted vegetables are tender and slightly browned, and the panzanella is a refreshing and flavorful side dish.
