  • Preheat oven to 350 degrees F (175 degrees C).

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).

1 tablespoon sugar
½ teaspoon kosher salt
½ cup cold butter, cut into small cubes
¼ cup water, ice
4 eggs
1 cup sugar
1 tablespoon McCormick® vanilla extract
1 teaspoon kosher salt
16 tablespoons butter
½ cup flour
1 teaspoon lemon zest
3 green apples, thinly sliced

Steps:

  • Crust: Combine flour, sugar, and salt in a food processor. Pulse a few times to mix. Add in butter and pulse a few times to break the butter down into pebble-size pieces. With the food processor running, drizzle in ice water. The dough should stick together when pressed between your fingers. (If dough doesn't stick together, add more water 1 tablespoon at a time.)
  • Lay out a sheet of plastic wrap. Dump dough onto the plastic wrap and shape into a disc. Cover tightly with the plastic wrap and refrigerate until ready to use.
  • Preheat oven to 350ºF (175ºC).
  • Generously spray a 9 or 10 inch (23 or 25 cm) tart pan with nonstick spray. On a floured surface, roll out the pie crust into a circle that is 2-3 inches (5-7.5 cm) bigger than your tart. 1/4 cup granulated sugar

1 1/4 cups confectioners' sugar
6 tablespoons unsalted butter, cut into pieces
3 tablespoons heavy cream
3/4 cup creamy peanut butter
1/2 teaspoon pure vanilla extract
Pinch of kosher salt
10 ounces semisweet (55 to 61 percent cacao) chocolate, chopped
1 tablespoon unsalted butter, room temperature
1 1/4 cups heavy cream
Lightly sweetened whipped cream, for serving (optional)
Peanut brittle, chopped, for serving (optional)

Steps:

  • Crust: Preheat oven to 350 degrees. Pulse wafers in a food processor until fine crumbs form. Add butter, granulated sugar, and salt; process until well combined. Press mixture firmly into bottom and up sides of a 10-inch fluted tart pan with removable bottom. Bake until crust is fragrant, about 15 minutes. Transfer to a wire rack and let cool completely.

  • Place tart on a revolving cake stand. Pour ganache into center of tart and carefully spread just shy of the edges. Using a small offset spatula held at an angle, create a spiral pattern in the top of the tart by spinning cake stand while slowly sliding spatula out from the center of the tart to the edge. Let stand at room temperature until ganache has set, about 1 hour. Serve at room temperature with whipped cream and peanut brittle, if desired. Tart is best served the same day but can be stored in an airtight container at room temperature up to 2 days.

1 cup (2 sticks) plus 2 tablespoons unsalted butter, room temperature
1 cup sugar
1/4 teaspoon kosher salt
1 large egg, beaten to blend
2 tablespoons heavy cream
2 teaspoons vanilla extract
3 1/2 cups unbleached all-purpose flour
Filling and assembly:
4 large eggs
1 cup sugar
1 cup (2 sticks) unsalted butter
1 vanilla bean, split lengthwise
1/2 cup all-purpose flour
1/2 teaspoon kosher salt
3 firm, tart apples (such as Pink Lady or Braeburn), peeled, cored, cut crosswise into 1/4"-thick rings
Whipped cream

An 11"-diameter or 11x8x1" tart pan with removable bottom

Steps:

  • For crust:
  • Coat tart pan with nonstick spray. Using an electric mixer or stand mixer fitted with a paddle, mix butter, sugar, and salt until pale and creamy, about 2 minutes.
  • Add egg, cream, and vanilla. Mix until smooth. Add flour all at once and beat until dough almost comes together. Turn dough out onto a work surface. Knead until dough just comes together, 4-5 times. Divide dough in half; form each half into a smooth ball. Flatten into disks and wrap each disk tightly in plastic. Chill 1 disk overnight; freeze second disk for another use.
  • Roll out chilled dough disk between two sheets of plastic wrap, lifting and adjusting plastic as needed, until 1/8" thick and 2" wider than tart pan. Transfer dough in plastic wrap to a baking sheet and refrigerate until firm enough to handle, about 30 minutes.
  • Remove top piece of plastic from dough. Invert dough into tart pan; press onto bottom and up sides. If dough is soft, chill until firm enough for remaining sheet of plastic to be removed. Trim edges of dough (patch up any holes or tears with extra dough). Chill until firm, about 1 hour.
  • Preheat oven to 350°F. Line dough with parchment paper or heavy-duty foil, leaving a 1"-2" overhang. Fill paper with dried beans or pie weights. Bake tart shell just until dough has dried and does not look wet in any spots, about 20 minutes. (If center still looks wet, bake crust without weights until dried and opaque, a few minutes longer.)
  • For filling and assembly:
  • Whisk eggs and sugar in a medium bowl just to blend. Place butter in a medium saucepan over medium heat. Scrape in seeds from vanilla bean; add bean. Cook, stirring often, until butter foams, then browns (do not burn), about 5 minutes. Let cool for 10 minutes; remove bean. Slowly whisk brown butter into egg mixture; whisk in flour and salt.
  • Line tart shell with apples.4 Pour filling over (if using rectangular pan, you may have 1/2 cup excess filling). Bake until apples are deep golden brown and filling is puffed, cracked, and set in center, 70-80 minutes.

3 ounces best-quality milk chocolate, finely chopped, plus more for curls

1/2 cup cream cheese (4 ounces)
1/3 cup sweetened condensed milk

Steps:

  • Crust: Pulse graham crackers in a food processor until fine crumbs form. Add butter and pulse until mixture resembles wet sand. Press mixture into bottom and up sides of a 13 3/4-by-4 1/4-inch rectangular tart pan with removable bottom. Refrigerate while making filling.
  • Filling: Prepare an ice-water bath. Place chocolate in a medium bowl. In a small saucepan, bring 1/2 cup cream to a boil over medium heat. Pour over chocolate and let stand 5 minutes. Steps:

1 teaspoon pure vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 cup sugar
1/4 teaspoon salt
1 teaspoon unflavored gelatin
1 cup sugar
1 tablespoon finely grated lemon zest, plus 2/3 cup fresh lemon juice
8 large egg yolks
1/4 teaspoon salt
1 1/4 sticks (10 tablespoons) unsalted butter, cut into pieces
2 cups sugar
8 large egg whites, room temperature
Pinch of salt
2 teaspoons pure vanilla extract
2 teaspoons cornstarch

Steps:

  • Make the tart shell: Melt butter over medium heat. Continue to cook, stirring constantly, until deep golden brown, about 11 minutes. Immediately pour browned butter into a large bowl, and let cool to room temperature, about 10 minutes. Stir in vanilla.
  • Preheat oven to 350 degrees. Whisk together flour, baking powder, sugar, and salt. Gradually stir into browned butter mixture. Press dough into a 9-inch tart pan with a removeable bottom. Refrigerate until firm, about 15 minutes. Using the tines of a fork, pierce bottom of tart shell all over.
  • Line tart shell with parchment and fill with pie weights or dried beans. Bake until edges are set and golden, 15 to 18 minutes. Remove weights and parchment and continue baking until bottom of crust is dry and golden, about 5 minutes more. Remove from oven and let cool completely on a wire rack.
  • Make the lemon curd filling: Place 2 1/2 teaspoons cold water in a small bowl. Sprinkle gelatin on top; let stand until softened, about 5 minutes.
  • In a medium saucepan, whisk together sugar, lemon zest, and egg yolks; whisk in lemon juice and salt. Add butter and place pan over medium-high heat. Cook, whisking constantly, until butter has melted, mixture is thick enough to coat the back of a spoon, and small bubbles form around edge of pan, about 5 minutes.
  • Remove pan from heat while continuing to whisk. Add softened gelatin, whisking to combine. Strain curd filling through a fine-mesh sieve into the tart shell, spreading evenly, and refrigerate for at least 1 hour before serving; wash and dry the saucepan.
  • Make the meringue topping: Just before serving, fill the same saucepan with about 2 inches water and bring to a simmer. Combine sugar, egg whites, and salt in a heatproof standing mixer bowl. Set bowl over (not in) simmering water, and whisk until mixture is warm to the touch and sugar dissolves, 2 to 3 minutes. (Test by rubbing mixture between your fingers; the mixture should be smooth.)
  • Attach bowl to standing mixer fitted with the whisk attachment. Whisk on high speed until stiff, glossy peaks form and mixture is cool, about 10 minutes. Whisk in vanilla and cornstarch.

1/2 cup whole shelled almonds
1/4 teaspoon water
1 1/2 sticks sweet butter, cut in 8 cubes
1 3/4 cups all-purpose flour
Pinch of salt
2 tablespoons sugar
1/4 teaspoon cold water
1/2 pound mild white cream-style cheese or firm yogurt (an Italian cheese called Mony Bianco is superb)
2 tablespoons jam or preserves (apricot, strawberry, peach)
1/2 teaspoon brandy or Cognac (optional)

Steps:

  • Put almonds and water in processor or blender and reduce to coarse powder. Add butter and blend well, scraping down sides of bowl several times. Press butter through sieve and chill until ready to use.
  • Put flour, salt, sugar and butter in bowl of food processor. Turn machine on and off briefly 4 or 5 times. Butter should be in pieces the size of lima beans. Then process for about 10 seconds while adding water quickly. Stop before ball forms. If you do not have food processor, this can be done by hand. Do not knead too much or crust will become tough.
  • Remove mixture from work bowl and form ball. Cover with plastic wrap and refrigerate for 2 hours.
  • Preheat oven to 400 degrees.
  • On lightly dusted surface, roll out pastry ball to form crust slightly larger than tart pan (most pans are 10 to 12 inches in diameter). If you have too much dough, roll excess into ball, wrap and freeze.
  • Butter tart pan well and gently lay in crust, pinching sides to fit pan. Place aluminum foil over crust and lay pinto beans or any weight over it and bake for 10 minutes. Remove foil and bake another 10 minutes or until crust is golden brown. Set aside to cool.
  • When crust is cool spread cheese mixture over bottom, then layer of sliced strawberries. Melt jam with Cognac in saucepan and brush it over to glaze the fruit. Chill before serving.

3/4 cup sugar
1/2 cup butter, cut into chunks
2 eggs, beaten
1/2 cup milk
1 teaspoon rum flavoring
1 1/2 cups flour

1 teaspoon baking soda
1 pinch salt
1/2 cup walnuts, chopped
1/4 cup maple syrup or 1/4 cup corn syrup

Steps:

  • In a medium saucepan, cook raisins, sugar, butter, eggs, milk and rum flavoring, stirring frequently, until it is slightly thickened and just beginning to bubble.
  • Cool slightly, uncovered.
  • In a large mixing bowl, stir tog the dry ingredients.
  • Make a well in the centre and pour in warm raisin mixture, stirring just until combined.
  • Spoon muffin mixture into 12 greased muffins cups.
  • Sprinkle walnuts over top of each muffin.
  • Bake at 375°F for 17 minutes or until centre tests done.
  • Remove from oven and immediately pour 1 tsp syrup over each muffin.
  • Cool about 10 minutes before removing them to cool on rack.
  • Serve warm or at room temperature.

Steps:

  • Make Crust: In a small bowl, sift together flour, baking soda, and salt, then whisk to mix evenly.
  • In a food processor, pulse the sugars until very fine.
  • With the motor running, add the butter, then the peanut butter, and process until smooth and creamy.
  • Add the egg and vanilla until incorporated.
  • Add the flour mixture until mixed together.
  • Scrape the dough into a bowl.
  • Cover and refrigerate at least 1 hour or overnight.
  • Heat oven to 375.
  • Press the dough evenly into a 9 inch tart pan.

  • Make Peanut Butter Mousse: In a mixer bowl on medium speed beat cream cheese, peanut butter and sugar until uniform in color.

  • With a rubber spatula, fold in remaining cream.
  • Scrape the mousse into the tart shell and smooth the surface so that it is level.
  • Refrigerate.
  • Make ganache: Meanwhile, break up chocolates into the bowl of a food processor.
  • Pulse until finely ground.
  • In a small saucepan, bring cream to a boil.
  • With the motor running, immediately pour hot cream through the feed tube onto the chocolate.
  • Process until smooth.
  • Add vanilla and pulse a few times to incorporate.
  • Pour the ganache into a bowl and let cool to room temperature.
  • Pour the ganache over peanut butter mousse in a circular motion.
  • Spread to the edges.
  • Refrigerate at least 2 hours to set before serving.

Steps:

  • Instructions for making the Rich Pie Pastry. Firstl, put the dry ingredients together - flour, salt and baking powder in a big bowl. Mix the dry ingredients well with a whisk. Next, beat the egg in a measuring cup. Add vinegar and fill the measuring cup to the 3/4 cup mark with water. Add to the flour mixture and mix well. Finally, add in the shortening and mix with your hands until the dough comes together. The dough has to be chilled in the refrigerator for at least 20 minutes.This dough can also be frozen for later use.This dough recipe can be used to make pie, egg custard, chicken pot pie, etc. Roll out the pastry dough on a floured surface to 1/8 inches in thickness. Pipe chocolate mixture in spiral atop filling. Using small sharp knife, begin at center and draw tip of knife toward edge of tart. Move knife over 2 inches; begin at edge and draw tip of knife toward center. Repeat to form web pattern. Chill until cold. (Can be made 2 days ahead. Keep chilled.) Cut tart into wedges and serve cold.

3 Tbsp all-purpose flour

1 tsp good vanilla

  • 1. Prepare the base: In a small bowl, mix together the flour and sugar. Using two knives or a pastry blender or your fingers, cut butter in until mixture resembles coarse crumbs. Press evenly into 9-inch square, ungreased pan. Bake in a preheated oven for 15-18 minutes or until golden brown. Place pan on wire rack.
  • 2. Prepare the Filling: In a medium bowl, combine the brown sugar, walnuts and raisins. Add eggs, flour, baking powder and vanilla and beat until well blended.
  • 3. Spread evenly over hot base and bake for 20 to 25 minutes or until golden brown. Place pan on a wire rack to cool completely. (The filling may seem a bit jiggly at first but will become firm when completely cooled). Cut into bars

1/2 cup golden syrup (such as Lyle's Golden Syrup)
1/4 cup heavy whipping cream

1 cup coarsely chopped pecans, toasted

Steps:

  • For crust:
  • Cook 3/4 cup butter in heavy small saucepan over medium heat until butter turns golden brown (nut-colored), watching carefully to prevent burning, about 4 minutes. Remove from heat. Pour melted brown butter into 1-cup glass measuring cup. Let melted butter stand until barely warm, 15 to 20 minutes.
  • Meanwhile, position rack in center of oven and preheat to 375°F. Butter bottom and sides of 9-inch-diameter tart pan with removable bottom. Whisk flour, brown sugar, and salt in medium bowl to blend. Add 1/2 cup of barely warm melted brown butter and stir with fork until moist dough forms (mixture will resemble wet sand). Transfer dough to prepared tart pan. Using fingertips, press dough firmly and evenly onto bottom and up sides of pan (dough will look glossy). Let crust rest 5 to 10 minutes at room temperature. Bake crust until set and just golden brown, 15 to 18 minutes.
  • For filling:
  • Meanwhile, whisk egg and brown sugar in medium bowl until well blended. Whisk in golden syrup, whipping cream, and salt. Stir in remaining melted brown butter, leaving most of darkened solids behind in bottom of measuring cup. Stir in pecans. Pour filling into warm crust, distributing pecans evenly.
  • Bake tart until filling is browned and slightly puffed and set at edges (center will still move slightly when pan is gently shaken), 25 to 27 minutes. Cool tart completely in pan on rack (center of filling will set as tart cools). DO AHEAD: Can be made 1 day ahead. Cover loosely and store at room temperature.
