Number Of Ingredients 17

29 oz Pumpkin Puree ((canned pumpkin))
1 cup granulated sugar
1/2 cup brown sugar, packed
3 eggs
1 cup vegetable oil
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
2 tsp pumpkin pie spice
2 tsp ground cinnamon
1-2 tsp salt (if a hint of saltiness is a good thing to you, definitely add 2 tsp)
4 oz cream cheese, softened (brick, not tub style cream cheese)
1/2 cup butter, softened
2 1/2 cups powdered sugar
1 tsp vanilla extract
1/2 tsp salt
1-2 tbsp heavy cream (milk or half and half can be used)

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, combine pumpkin, sugar, eggs and oil with an electric mixer until well combined.
  • Add flour, baking soda, baking powder, pumpkin pie spice, cinnamon and salt to the wet ingredients and mix by hand until just combined.
  • Pour batter into a 9x13" baking pan that has been sprayed with non-stick cooking spray.
  • Bake for approximately 30-40 minutes. Bars should be starting to set up, but remember this is more like a brownie than a cake, it should seem a bit undercooked in the center, but not still be wet.

Tips:

  • Choosing the Right Pumpkin: For the best flavor and texture, choose a sugar pumpkin, also known as a pie pumpkin, which is smaller and sweeter than other varieties.
  • Preparing the Pumpkin: If using a fresh pumpkin, cut it in half, scoop out the seeds and pulp, and roast it cut-side down in a 350°F oven until tender, about 1 hour. Remove the skin and mash the pumpkin until smooth.
  • Measuring Flour: For accurate results, use the spoon and level method to measure the flour. Fluff the flour with a spoon, then spoon it into the measuring cup and level it off with a knife.
  • Creaming Butter and Sugar: Creaming the butter and sugar together until light and fluffy incorporates air into the mixture, resulting in a tender and moist crumb.
  • Adding Eggs: Add the eggs one at a time, beating well after each addition. This helps prevent the batter from curdling.
  • Folding in the Pumpkin: Gently fold the pumpkin purée into the batter using a spatula to avoid overmixing, which can toughen the bars.
  • Baking the Bars: Bake the bars in a preheated oven at 350°F for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Cooling the Bars: Allow the bars to cool completely in the pan before frosting them. This helps prevent the frosting from melting.
  • Making the Cream Cheese Frosting: Beat the cream cheese and butter together until smooth, then gradually beat in the confectioners' sugar and vanilla extract. Adjust the consistency of the frosting by adding more confectioners' sugar or milk as needed.
  • Frosting the Bars: Spread the cream cheese frosting evenly over the cooled bars. You can use an offset spatula or a butter knife for this.
  • Decorating the Bars: If desired, you can decorate the bars with a sprinkle of pumpkin pie spice, chopped nuts, or a drizzle of caramel sauce.

Conclusion:

These butter-not-oil pumpkin bars with cream cheese frosting are a delicious and comforting fall treat that are perfect for any occasion. With their tender crumb, moist texture, and sweet and spicy flavor, these bars are sure to be a hit with everyone. The cream cheese frosting adds a rich and tangy touch that complements the pumpkin flavor perfectly. Whether you're serving them at a holiday gathering, a potluck, or simply as a sweet snack, these bars are sure to be a crowd-pleaser.
