BUTTER LETTUCE SALAD WITH CANDIED WALNUTS
This is a delicious salad that I adapted from one by Sandra Lee of Semi-Homemade Cooking on the Food Network. She recommends using an Asian-style salad dressing such as miso dressing or ginger dressing. We definitely prefer using a raspberry walnut vinaigrette. Also, the amount of cinnamon used in the candied walnuts may be decreased if desired -- I prefer just a little less, as well as the fact that the cinnamon seems to make it take longer for the walnuts to crystallize in the oven. I hope you enjoy this!

Steps:
- Sauté bacon in heavy medium skillet until brown and crisp.
- Using a slotted spoon, transfer to paper towel to drain.
- Whisk together mayonnaise and vinegar.
- Gradually whisk in oil, then cheese.
- Season with salt and pepper to taste.
- Toss lettuce leaves, half of the cherries and half of the bacon with enough dressing to coat.
- Divide salad among 6 plates.
- Top with remaining cherries and bacon and serve.
Tips:
- Select the right lettuce: Choose fresh, crisp, and tender butter lettuce heads with tightly packed leaves. Avoid wilted or bruised leaves.
- Wash and dry the lettuce: Rinse the lettuce thoroughly under cold water to remove any dirt or debris. Gently pat the leaves dry with a clean kitchen towel or salad spinner to remove excess moisture.
- Tear or cut the lettuce: Tear the lettuce leaves into bite-sized pieces or use a sharp knife to cut them into thin ribbons. This will help the dressing coat the leaves evenly.
- Make a simple dressing: A classic vinaigrette dressing made with olive oil, vinegar, salt, and pepper is a perfect match for butter lettuce. You can also add herbs, spices, or other ingredients to create a more flavorful dressing.
- Toss the lettuce with the dressing: Just before serving, toss the lettuce leaves with the dressing until they are evenly coated. Be gentle to avoid bruising the delicate leaves.
- Add toppings: Feel free to add additional toppings to your butter lettuce salad, such as crumbled bacon, grated Parmesan cheese, chopped nuts, or dried cranberries. These toppings will add flavor, texture, and color to the salad.
Conclusion:
Butter lettuce is a delicious and versatile salad green that can be used in a variety of dishes. Its mild flavor and tender leaves make it a great choice for salads, wraps, and sandwiches. With its high nutritional value and ability to be paired with a wide range of ingredients, butter lettuce is a healthy and flavorful addition to any meal.
