2 tablespoons (1/4 stick) butter
2 tablespoons extra-virgin olive oil plus additional for drizzling
1/2 pound spring onions or green onions (dark green parts discarded); white parts cut into 1/4-inch-thick slices, pale green parts cut into 1/2-inch-thick slices
2 tablespoons minced shallot
Coarse kosher salt
1/2 cup dry white wine
1/2 cup low-salt chicken broth
1 1/2 pounds asparagus, cut crosswise into 3/4-inch pieces
2 cups shelled fresh peas (from about 2 pounds peas in pods)
1 pound campanelle (trumpet-shaped pasta) or medium (about 1-inch) shell-shaped pasta
1 head of butter lettuce or Boston lettuce (about 6 ounces), cored, leaves cut into 3/4-inch-wide slices
1 cup finely grated Parmesan cheese plus additional for sprinkling
1/2 cup chopped fresh Italian parsley
4 ounces thinly sliced prosciutto, cut crosswise into 1/2-inch-wide strips

Steps:

  • Melt butter with 2 tablespoons oil in heavy large skillet over medium heat. Add onions and shallot. Sprinkle with coarse salt and pepper. Sauté until tender (do not brown), about 8 minutes. Add wine; increase heat to medium-high and simmer until liquid is reduced to glaze, about 3 minutes. Add broth and bring to simmer; set aside.

BUTTER LETTUCE SALAD WITH CANDIED WALNUTS

Butter Lettuce Salad With Candied Walnuts image

This is a delicious salad that I adapted from one by Sandra Lee of Semi-Homemade Cooking on the Food Network. She recommends using an Asian-style salad dressing such as miso dressing or ginger dressing. We definitely prefer using a raspberry walnut vinaigrette. Also, the amount of cinnamon used in the candied walnuts may be decreased if desired -- I prefer just a little less, as well as the fact that the cinnamon seems to make it take longer for the walnuts to crystallize in the oven. I hope you enjoy this!

Categories     Low Cholesterol

Time 22m

Yield 4 serving(s)

Number Of Ingredients 9

3 tablespoons sugar
1 1/2 tablespoons sugar
1 1/2 tablespoons orange juice or 1 1/2 tablespoons tangerine juice
1 cup walnut halves
1/4 teaspoon ground cinnamon
1 head butter lettuce, washed and dried
6 ounces canned mandarin orange segments
1/4 medium red onion, very thinly sliced
1/2 cup salad dressing (A Raspberry Walnut Vinaigrette or similar dressing is recommended)

Steps:

  • Preheat oven to 375°.
  • Line a sheet pan with Silpat (or with aluminum foil, sprayed with non-stick spray).
  • In a 10" skillet over medium heat, add 3 tablespoons of sugar and 1 1/2 tablespoons of orange juice (or tangerine juice-- or a combination).
  • Bring to a simmer, then add the walnuts.
  • Cook until sugar is absorbed and mixture starts to caramelize around walnuts, stirring constantly-- about 2 minutes.
  • In a small bowl, mix the cinnamon and remaining 1 1/2 tablespoons of sugar.
  • Toss the walnuts in the cinnamon-sugar mixture.
  • Place walnuts in a single layer on the prepared sheet pan.
  • Bake until walnuts appear crystallized and toasted (approximately 8 or more minutes).
  • Set aside.
  • Place 4 to 6 dry butter lettuce leaves on each plate.
  • Randomly place orange segments, onion slices and walnuts on top of each lettuce bed.
  • Drizzle about 2 tablespoons of dressing on top of each salad and serve.
  • (We prefer a Raspberry Walnut Vinaigrette).
  • Enjoy!

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken     Chicken Breast Recipes

Number Of Ingredients 12

5 cloves garlic
1 dried bay leaf
4 (about 1 3/4 pounds) boneless and skinless chicken breasts
3 tablespoons freshly squeezed lemon juice (about 1 lemon)
1/2 teaspoon coarse salt
6 tablespoons part-skim ricotta cheese
2 tablespoons extra-virgin olive oil
1/2 cup loosely packed small dill sprigs, coarsely chopped
Freshly ground pepper
3/4 pound small boiling potatoes, such as golden creamers

1/2 pint cherry tomatoes, halved

  • Fill a large saucepan with enough water to cover chicken. Add garlic and bay leaf; bring to a boil. Place chicken in pan, and gently simmer until cooked through, 15 to 20 minutes. Use a slotted spoon to transfer chicken and garlic to a plate; let cool. Reserve poaching liquid.
  • Make dressing: Pulse garlic in a food processor to form a coarse paste, 5 to 10 seconds. Add 2 tablespoons reserved poaching liquid and the lemon juice, salt, and ricotta; pulse to combine. With machine running, add oil in a slow, steady stream, mixing until emulsified. Stir in dill, and season with pepper. Set aside.
  • In a medium saucepan, cover potatoes with cold water. Bring to a boil; cook until easily pierced with a paring knife, about 20 minutes. Drain, and let cool. Peel if desired, and cut into quarters.
  • Slice each chicken breast crosswise into about six strips. Divide lettuce, potatoes, tomatoes, and chicken among serving plates. Drizzle with some of the dressing, and serve immediately with remaining dressing on the side.

  • Select the right lettuce: Choose fresh, crisp, and tender butter lettuce heads with tightly packed leaves. Avoid wilted or bruised leaves.
  • Wash and dry the lettuce: Rinse the lettuce thoroughly under cold water to remove any dirt or debris. Gently pat the leaves dry with a clean kitchen towel or salad spinner to remove excess moisture.
  • Tear or cut the lettuce: Tear the lettuce leaves into bite-sized pieces or use a sharp knife to cut them into thin ribbons. This will help the dressing coat the leaves evenly.
  • Make a simple dressing: A classic vinaigrette dressing made with olive oil, vinegar, salt, and pepper is a perfect match for butter lettuce. You can also add herbs, spices, or other ingredients to create a more flavorful dressing.
  • Toss the lettuce with the dressing: Just before serving, toss the lettuce leaves with the dressing until they are evenly coated. Be gentle to avoid bruising the delicate leaves.
  • Add toppings: Feel free to add additional toppings to your butter lettuce salad, such as crumbled bacon, grated Parmesan cheese, chopped nuts, or dried cranberries. These toppings will add flavor, texture, and color to the salad.

Conclusion:

Butter lettuce is a delicious and versatile salad green that can be used in a variety of dishes. Its mild flavor and tender leaves make it a great choice for salads, wraps, and sandwiches. With its high nutritional value and ability to be paired with a wide range of ingredients, butter lettuce is a healthy and flavorful addition to any meal.
