Time 35m

Number Of Ingredients 13

3 Tbsp clarified butter
1 c basmati rice, rinse thoroughly and drained
1/2 c orzo pasta
1/3 c red onions, finely chopped
1/4 c celery, finely diced
1 large clove garlic, pressed
3 c low-sodium chicken broth
1 tsp herbes de provence
1/2 tsp dried basil
1/8 tsp cayenne pepper
1/4 tsp ground himalayan sea salt, or to taste
1/4 tsp freshly ground black pepper, or to taste
1 1/2 Tbsp fresh parsley, chopped

Steps:

  • 1. In a medium saucepan over medium heat, add butter, basmati and orzo. Stir well and sauté until the rice turns brown, about 7 minutes, stirring often. To this add, red onions, celery and pressed garlic; sauté for 2 minutes, stirring constantly.
  • 2. Pour in chicken broth and season with Herbes de Provence, basil, cayenne pepper, sea salt, freshly ground black pepper and parsley. Bring the mixture to a boil, cover and reduce the heat to low. Simmer for 15 to 17 minutes or until the liquid is absorbed.
  • 3. Remove from the heat and fluff rice with a fork. Cover and let it sit for 5 minutes before serving. Makes 4 servings

Tips:

  • Use the right kind of rice. Medium-grain rice, such as arborio or carnaroli, is best for risotto because it absorbs the cooking liquid well and becomes creamy. Avoid using long-grain rice, such as basmati or jasmine, as it will not yield the same creamy texture.
  • Toast the rice before adding the liquid. This step helps to develop the rice's flavor and prevent it from sticking together. To toast the rice, heat a large pot or Dutch oven over medium heat. Add the rice and cook, stirring constantly, for 2-3 minutes, or until the rice is lightly browned.
  • Add the liquid gradually. When adding the cooking liquid to the rice, do so gradually, stirring constantly. This will help to prevent the rice from clumping together. You can use a variety of liquids to make risotto, such as chicken broth, vegetable broth, or white wine. If you are using wine, add it first and let it cook for a few minutes before adding the broth.
  • Stir the risotto constantly. This is essential for preventing the rice from sticking to the bottom of the pot and burning. Stir the risotto gently but continuously throughout the cooking process.
  • Cook the risotto until it is creamy and al dente. The risotto is done when it is creamy and al dente, or slightly firm to the bite. This usually takes about 18-20 minutes. To check if the risotto is done, taste a grain of rice. It should be tender but still have a slight bite to it.
  • Add butter and Parmesan cheese. When the risotto is done, stir in butter and Parmesan cheese. This will help to make the risotto even more creamy and flavorful.

Conclusion:

Risotto is a delicious and versatile dish that can be made with a variety of ingredients. By following these tips, you can make perfect risotto every time. Whether you are making a classic risotto with butter and Parmesan cheese or a more creative version with vegetables or seafood, you are sure to enjoy this creamy and flavorful dish.
