1 cup butter, softened
1 package (8 ounces) cream cheese, softened
2 cups sugar
1 large egg
1 teaspoon vanilla extract
1/4 teaspoon almond extract
1/4 teaspoon coconut extract
3-1/2 cups all-purpose flour
1 teaspoon baking powder
Miniature semisweet chocolate chips, and green and red M&M's minis
FROSTING:
1 cup confectioners' sugar
1/8 teaspoon coconut extract
2 to 4 teaspoons 2% milk
Red and/or green food coloring
Miniature milk chocolate kisses, unwrapped

Steps:

  • In a large bowl, cream butter, cream cheese and sugar until light and fluffy. Beat in egg and extracts. In another bowl, whisk flour and baking powder; gradually beat into creamed mixture. Refrigerate, covered, overnight., Preheat oven to 325°. Shape dough into forty-eight 1-in. balls, forty-eight 3/4-in. balls and forty-eight 1/2-in. balls. On ungreased baking sheets, place one ball of each size, side by side, for each snowman., Bake 18-20 minutes or until light brown. Remove from oven; cool on pans 2 minutes. Press on chocolate chips for eyes and M&M's for buttons. Carefully remove from pans to wire racks to cool completely., For frosting, in a small bowl, beat confectioners' sugar, extract and enough milk to reach a piping consistency. If two colors of frosting are desired, transfer half of the frosting to another bowl and tint each with a different food coloring., Cut a small hole in a corner of a food-safe plastic bag; fill with frosting. Pipe scarves on snowmen. Use frosting to attach chocolate kisses for hats.

A fun holiday baking project - make snowmen out of Nutter Butter cookies and a few other ingredients!

Nutter Butter cookies
White candy melts (vanilla flavored)
M&M candies
Orange Tic-Tacs (cut in half)
Black decorator icing

Steps:

  • Line a baking sheet with wax paper; set aside.
  • In a small to medium bowl, melt the white candy melts according to the package instructions.
  • Working one at a time, dip a Nutter Butter cookie into the melted coating and flip it over to coat completely (a fork is great for this). Remove and let any excess drip off then place on the wax paper-lined baking sheet. Repeat with the remaining Nutter Butter cookies. Place the baking sheet into the refrigerator for at least 30 minutes so the coating can set.
  • Attach a small decorating tip (I used a #2) to a pastry bag and fill with black icing (I just used Wilton decorating icing to make it easy). Dab a small amount on one side of an M&M and place on the coated cookie. Repeat with another just below to make the two "buttons".
  • Dab another small amount on the bottom of half of a Tic Tac and affix to the center of the top of the cookie for the nose. Again, repeat.
  • Now squeeze out small dots for the eyes and the mouth. Ta-Da! Snowmen!

About 8 ounces vanilla candy melting wafers
12 round peanut butter cookies (or sugar cookies)
4 marshmallows, cut crosswise into thirds
24 mini chocolate chips
12 orange sprinkles
6 mini peanut butter cups, halved and trimmed to look like brimmed hats
Assorted other sprinkles for decorating, if desired

Steps:

  • Melt the candy melting wafers according to the package directions. Spoon some of the melted candy on top of a cookie and spread it so it covers most of the cookie but has an irregular border. Place a slice of marshmallow toward the top edge and spoon some more melted candy on top, smoothing it to fully cover the marshmallow and blend it into the candy on the cookie.
  • Decorate the face of the snowman with mini chocolate chips for eyes and an orange sprinkle as a carrot nose. Place a peanut butter cup half on top of the snowman's head like a hat. Use other sprinkles to add a mouth or buttons if desired. Repeat with the remaining candy, cookies and decorations (rewarming the candy melts if necessary). Let the cookies set, about 10 minutes.

1 pouch (1 lb 1.5 oz) Betty Crocker™ sugar cookie mix
1/2 cup butter, softened
1 egg
1 package (1 lb) vanilla-flavored candy coating (almond bark)
Black confetti candy sprinkles
Orange candy sprinkles
Betty Crocker™ Decorating Cookie Icing chocolate icing
Betty Crocker™ Decorating Decors snowflakes

Steps:

  • Heat oven to 375°F. In medium bowl, stir together cookie mix, butter and egg until soft dough forms.
  • Roll half the dough into walnut-size balls, and then flatten slightly on a parchment-lined or ungreased cookie sheet. Roll remaining dough into marble-size balls, and place on cookie sheet; do not flatten these.
  • Bake 7 to 9 minutes or until edges are lightly golden brown. Cool about 5 minutes or until cookies are firm enough to be transferred to cooling rack. Cool completely before frosting.
  • In large microwavable bowl, microwave candy coating at 30-second intervals until it can be stirred smooth. Cover work surface with waxed or parchment paper.
  • Place a dot of melted coating on bottom of a small cookie and place it toward one edge of a larger cookie. Spoon coating over entire cookie, allowing some to spill over edge of bottom cookie.
  • Place two black confetti pieces on small cookie for eyes, and an orange candy sprinkle in center for a carrot nose. Place three black confetti sprinkle "buttons" on the bottom cookie. Alternatively, you can decorate one large cookie in the same manner, to represent a completely melted snowman.
  • Use the cookie icing to draw on arms. Sprinkle with snowflakes; allow to dry completely.
  • Store cookies in airtight container.

2 (16-ounce) bags white chocolate chips
2 tablespoons shortening
1 (16-ounce) package peanut butter sandwich cookies (recommended: Nabisco Nutter Butters)
Chocolate sprinkles
Colored sprinkles
Candy buttons (dot candy on paper)
Red nonpareils
Large sugared gum drop jellies
Red string licorice ((recommended: Twizzlers Pull-n-Peel)

Steps:

  • Place white chocolate chips and shortening in a medium microwave-safe bowl. Microwave on high for 1 minute; stir until chips are melted and mixture is smooth. If necessary, microwave on high for additional 30 second intervals until mixture is smooth. If you prefer, place in double boiler over low heat, stirring until completely melted and smooth.
  • Meanwhile, pierce 1 end of each cookie with a toothpick. Use the toothpick to dip entire cookie into the white chocolate mixture. Let excess drip back into bowl and lay cookie on wire rack. Before the white chocolate has a chance to cool, decorate the cookie with various candies into a playful snowman.
  • Place chocolate sprinkles as eyebrows, blue or green dots for eyes, an orange sprinkle placed vertically for the nose and several red nonpareils for a mouth. Cut a gumdrop in half, slice a sliver from each half lengthwise to form a crescent shaped brim to the hat. Top off the hat with a gumdrop half and reserve the other half for another snowman. You may have to flatten the gumdrop a bit to fit the snowman.
  • After the snowman has completely dried, tie a red string licorice around the neck as a scarf. Using a rolling pin to flatten the licorice will make it easier for the scarf to stay tied and look natural.
