Steps:

Cook the butter, occasionally scraping the bottom and sides of the pan with a rubber spatula until it turns a deep golden brown and smells nutty. Don't walk away from the pan during this process. The butter can go from brown and nutty to acrid and burnt in mere moments.
  • Transfer butter and all the brown bits from the pan to a heat-safe bowl, and let it cool slightly. Whisk in the confectioners' sugar, maple syrup and salt until smooth. A dose of aged apple brandy (he uses a local product, Catoctin Creek) keeps the sweetness in check, but bourbon or any aged brandy will do the job. For a nonalcoholic version, simply omit the brandy from the sauce, and swap in apple juice or cider in the cake batter.

  • Make the caramel sauce: This calls for close attention; don't wander off, but do use the time to measure out the ingredients for the cake. In a medium saucepan, combine the sugar with 1/4 cup water. Swirl together and bring to a boil over high heat, brushing down the sides of the pan with a wet pastry brush to prevent sugar crystals from forming (or use a nonstick saucepan).
  • Once it comes to a boil, cook over medium-high heat (do not stir, but it's OK to swirl the pan occasionally) until the mixture is bubbling at a slower pace and has turned a deep golden brown, about 5 minutes.
  • Turn off the heat, then gradually and carefully stir in the cream (it will splatter a bit). Add the applejack, butter, vanilla and salt, stirring until thoroughly combined and smooth. Taste and add more applejack and salt, if desired. You'll use 1/4 cup of this caramel sauce in the cake batter, and the rest for brushing on the cake after baking.
  • Make the cake: Heat the oven to 350 degrees. Grease the inside of a 9- or 10-inch Bundt-style pan, preferably nonstick, with nonstick cooking spray. If your pan is not nonstick, refrigerate the greased pan for 10 minutes, then grease it again to thoroughly coat.
  • In the bowl of a stand mixer fitted with the paddle attachment, cream the granulated sugar, butter and cream cheese on medium speed until light and fluffy, about 3 minutes. Scrape down the sides of the bowl. Reduce the speed to medium-low, add the 1/4 cup caramel sauce and beat until combined. Add the eggs one at a time, beating well after each addition, then add the vanilla and beat until just combined. Scrape down the sides of the bowl.
  • In a medium bowl, sift together the flour, baking powder and salt. With the mixer running on low speed, add a third of the flour mixture, then the milk, then another third of the flour mixture, then the applejack, and finally the remaining flour mixture, mixing until well combined after each addition. Remove the bowl from the mixer and stir in the pecans by hand just until evenly distributed.
  • Pour the batter into the prepared Bundt pan. Bang the filled pan on the counter a couple of times to release any air bubbles. Bake for 45 to 60 minutes, until the cake is well browned and starts pulling away from the sides of the pan, and a toothpick inserted into the thickest part of the cake comes out clean.
  • Let cool in the pan for 5 minutes; the steam will help with release. Set a wire rack on a rimmed baking sheet.
  • Flip the cake (still in the pan) onto the rack and let cool another 5 to 10 minutes. The cake may drop out of the pan as it cools. If not, shake the pan to loosen it, running a knife around the edges.
  • Meanwhile, warm the remaining caramel sauce. When the cake is turned out on the rack, brush sauce over the entire surface. Let it soak in, then repeat once or twice more until the cake is well coated. Let cool for 1 hour before serving; the caramel will become somewhat set and be much less sticky.

1/3 cup cream cheese, softened

3 ounces bittersweet chocolate, chopped
3/4 cup sour cream

  • Beat in sour cream until blended.

8 ounces butter, softened
2 cups sugar
1/2 cup chunky peanut butter
4 ounces unsweetened chocolate squares, melted
6 eggs
2 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/3 cup milk
1 cup semi-sweet chocolate chips
1 cup semi-sweet chocolate chips
2 tablespoons peanut butter
2 cups powdered sugar
6 tablespoons milk
1/3 cup chopped peanuts, to garnish

Steps:

  • Preheat oven to 350 degrees.
  • Butter a 12-cup bundt pan and set aside.
  • Beat together, in a large bowl, butter and sugar with an electric mixer on medium speed unti light and fluffy, 1 to 2 minutes.
  • Add peanut butter and melted chocolate and beat until well-blended.
  • Add eggs, one at a time, beating well after each addition.
  • Sift together flour, baking powder, and baking soda; beat into chocolate mixture alternately with milk, just until combined.
  • Stir in chocolate chips.
  • Turn batter into prepared pan.
  • Bake 55-60 minutes or until a cake tester inserted in center comes out clean.
  • Let cool in pan 15 minutes, then unmold onto a rack and let cool completely.
  • Frost cake all over with Quick Chocolate Frosting and sprinkle nuts on top.
  • Quick Chocolate Frosting: In a 1-quart glass bowl, combine chocolate chips and butter; heat in a microwave on high 1 to 1 1/2 minutes, or until melted and smooth when stirred; Beat in powdered sugar and milk.

This cake is very rich, but delicious. It is great for family gatherings (my family always begs me to make one). I got the recipe from an older lady I worked with.

18 ounces Duncan Hines butter cake mix
6 ounces instant vanilla pudding, large box
1 cup water
1/2 cup butter
4 large eggs
1 teaspoon vanilla extract
1 cup sugar
1/4 cup water
1/2 cup butter (Melted)
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees.
  • Spray bunt pan with cooking spray & lightly flour pan.
  • Mix all the cake ingredients (cake mix, pudding, water, butter, vanilla extract, and eggs). Beat for about 4 minutes.
  • Pour cake batter into pan and bake cake per time on box approximately 33-43 minutes (until tooth pick in center comes out clean).
  • After removing the cake from the oven, poke holes in the bottom of the cake all over (with ice pick, or similar).
  • Let cool about 1/2 hour.
  • Mix all sugar glaze ingredients together (sugar, water, butter, vanilla extract).
  • Pour sugar mixture all over the bottom and down sides of cake. Leave about 1/2 the sugar mixture in the bowl for the top of cake after flipping.
  • Let cool about and hour and then flip cake onto cake pan. Pour the remaining sugar mixture on top of the cake.
  • I usually spread with a spatula and make sure top & sides of cake is covered with the sugar glaze.
  • Let sit for another hour to set up and serve.

Super easy and delicious cake that always pleases. The cake always comes out moist and is a combination of salty and sweet. Excellent with a scoop of vanilla ice cream or whipped cream.

CAKE
1 box chocolate butter cake mix
16 oz sour cream
3 large eggs
10 miniature peanut butter cups (unwrapped & cut in half)
GLAZE
1/2 c semi-sweet chocolate chips
1/2 c peanut butter, creamy
1 tsp milk

Steps:

  • 1. Preheat oven to 350. Grease and flour bundt pan (I use Bakers Joy)
  • 2. Combine cake mix, carton of sour cream and the 3 eggs until smooth. Pour half of the batter in the prepared pan. Evenly spread halved peanut butter cups over batter. Top with remaining batter.
  • 3. Bake approximately 40-45 minutes or until toothpick tests done. Allow to cool for 10 minutes and release cake from pan. Cool.
  • 4. Place chocolate chips, peanut butter and milk in a microwave safe bowl. Microwave in 15 second intervals until chips are melted and mixture is smooth. If mixture is too thick add a little more milk until a glaze consistancy. Pour over cooled cake.

Tips:

  • Use softened butter: This will make the cake lighter and fluffier. If you forget to take the butter out of the fridge ahead of time, you can microwave it on low power for a few seconds until it's softened.
  • Cream the butter and sugar together until light and fluffy: This will help incorporate air into the mixture, which will also make the cake lighter and fluffier. If you don't have a stand mixer, you can use a hand mixer on high speed for about 3 minutes.
  • Add the eggs one at a time, beating well after each addition: This will help prevent the mixture from curdling. If you add the eggs all at once, the mixture may curdle and the cake will be dense.
  • Use buttermilk and sour cream: These ingredients will make the cake moist and tender. If you don't have buttermilk, you can make your own by adding 1 tablespoon of vinegar or lemon juice to 1 cup of milk and letting it sit for 5 minutes.
  • Don't overmix the batter: Overmixing the batter will make the cake tough. Mix the batter until just combined, then stop.
  • Bake the cake until a toothpick inserted into the center comes out clean: The cake is done baking when a toothpick inserted into the center comes out clean. If the toothpick comes out with crumbs or batter attached, the cake needs to bake for a few more minutes.
